🍽️ Vegan Chorizo al pastor

Ingredients
- onions, red 1 pc.
- cilantro, fresh 15 g
- vine tomatoes 1 pc.
- pineapple 0.5 pc.
- Vemondo vegan chorizo 4 pc.
- olive oil 2 tbsp
- pita bread 4 pc.
- organic limes 1 pc.
- salt pinch
- pepper, black ground pinch
- chili, ground pinch
Instructions
- 1. Preheat your grill.
- 2. Halve the onions and peel them.
- 3. Cut the peeled onions into quarters.
- 4. Wash the cilantro thoroughly.
- 5. Dry the cilantro.
- 6. Finely chop the cilantro.
- 7. Wash the tomatoes.
- 8. Halve the tomatoes.
- 9. Remove the tough core from the tomato halves.
- 10. Dice the cored tomatoes.
- 11. Peel the pineapple.
- 12. Quarter the peeled pineapple.
- 13. Remove the hard core from the pineapple quarters.
- 14. Cut the pineapple flesh into cubes.
- 15. Thread pineapple pieces and onion quarters alternately onto wooden skewers.
- 16. Brush the vegan chorizo with two tablespoons of olive oil.
- 17. Place the chorizo and the skewers on the hot grill.
- 18. Grill the chorizo and skewers for about three minutes per side.
- 19. Place the pita breads on top of the chorizo.
- 20. Grill the breads along with it for about two minutes.
- 21. Halve the lime.
- 22. Squeeze the juice from one lime half.
- 23. Cut the other lime half into quarters.
- 24. Remove the chorizo and skewers from the grill.
- 25. Cut the grilled chorizo into pieces.
- 26. Remove the grilled pineapple from the skewers.
- 27. Place the chorizo pieces in a bowl.
- 28. Add the grilled pineapple to the bowl.
- 29. Add the grilled onions to the bowl.
- 30. Add the chopped cilantro to the bowl.
- 31. Add the tomato cubes to the bowl.
- 32. Add the lime juice to the bowl.
- 33. Mix all ingredients in the bowl well.
- 34. Season the mixture with salt.
- 35. Season the mixture with pepper.
- 36. Season the mixture with chili.
- 37. Add two tablespoons of olive oil to the mixture.
- 38. Taste the mixture and adjust seasoning if needed.
- 39. Halve the pita breads.
- 40. Slightly open the pita halves.
- 41. Fill the chorizo mixture into the pita breads.
- 42. Serve the breads with the lime quarters.
