  1. 1. Preheat the oven to 180 degrees Celsius with fan.
  2. 2. Line a baking tray with baking paper.
  3. 3. Spread the fries evenly on the tray.
  4. 4. Bake the fries for about 20 minutes until golden brown.
  5. 5. Turn the fries halfway through the baking time.
  6. 6. Peel the onion and garlic.
  7. 7. Finely dice the onion and garlic.
  8. 8. Wash the coriander and shake it dry.
  9. 9. Roughly pick off the coriander leaves and set them aside.
  10. 10. Finely chop the coriander stems.
  11. 11. Drain the kidney beans in a sieve.
  12. 12. Heat oil in a pot on high heat.
  13. 13. Fry the vegan mince with a little salt for about 8 minutes until crumbly.
  14. 14. Add the onion, garlic, and coriander stems.
  15. 15. Sauté the vegetables for about 2–3 minutes.
  16. 16. Season with chili flakes, cayenne pepper, paprika, and salt.
  17. 17. Toast the spices for about 2 minutes.
  18. 18. Add the chopped tomatoes and kidney beans.
  19. 19. Simmer the chili for about 20–30 minutes on low to medium heat.
  20. 20. Stir the chili occasionally.
  21. 21. Season the finished chili generously with salt and pepper.
  22. 22. Melt margarine in a pot on medium heat.
  23. 23. Sift the flour over the margarine.
  24. 24. Cook the flour under stirring for about 2 minutes until light yellow.
  25. 25. Deglaze the mixture with soy drink.
  26. 26. Let the sauce simmer lightly for about 4–5 minutes.
  27. 27. Stir in the vegan grated cheese gradually and mix until smooth.
  28. 28. Add turmeric and Sriracha sauce.
  29. 29. Season the cheese sauce with cayenne pepper and a little salt.
  30. 30. Take the crispy and golden fries out of the oven.
  31. 31. Salt the fries immediately after removing them.
  32. 32. Serve the fries topped with the chili and cheese sauce.
  33. 33. Sprinkle the dish with the prepared coriander leaves.
  34. 34. Serve the fries and enjoy your meal!
