🍽️ Vegan Chili Cheese Fries

Ingredients
- frozen fries 1000 g
- red onions 1 pc.
- garlic cloves 1 pc.
- fresh cilantro 20 g
- kidney beans 100 g
- oil 2 tbsp
- Vemondo vegan mince 250 g
- chili flakes pinch
- cayenne pepper pinch
- sweet paprika pinch
- salt pinch
- diced tomatoes 200 g
- black ground pepper pinch
- vegan margarine 1 tbsp
- wheat flour, Type 405 1 tbsp
- soy drink 150 ml
- Vemondo grating delight 100 g
- ground turmeric 0.25 tsp
- Sriracha sauce 0.1 tsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Line a baking tray with baking paper.
- 3. Spread the fries evenly on the tray.
- 4. Bake the fries for about 20 minutes until golden brown.
- 5. Turn the fries halfway through the baking time.
- 6. Peel the onion and garlic.
- 7. Finely dice the onion and garlic.
- 8. Wash the coriander and shake it dry.
- 9. Roughly pick off the coriander leaves and set them aside.
- 10. Finely chop the coriander stems.
- 11. Drain the kidney beans in a sieve.
- 12. Heat oil in a pot on high heat.
- 13. Fry the vegan mince with a little salt for about 8 minutes until crumbly.
- 14. Add the onion, garlic, and coriander stems.
- 15. Sauté the vegetables for about 2–3 minutes.
- 16. Season with chili flakes, cayenne pepper, paprika, and salt.
- 17. Toast the spices for about 2 minutes.
- 18. Add the chopped tomatoes and kidney beans.
- 19. Simmer the chili for about 20–30 minutes on low to medium heat.
- 20. Stir the chili occasionally.
- 21. Season the finished chili generously with salt and pepper.
- 22. Melt margarine in a pot on medium heat.
- 23. Sift the flour over the margarine.
- 24. Cook the flour under stirring for about 2 minutes until light yellow.
- 25. Deglaze the mixture with soy drink.
- 26. Let the sauce simmer lightly for about 4–5 minutes.
- 27. Stir in the vegan grated cheese gradually and mix until smooth.
- 28. Add turmeric and Sriracha sauce.
- 29. Season the cheese sauce with cayenne pepper and a little salt.
- 30. Take the crispy and golden fries out of the oven.
- 31. Salt the fries immediately after removing them.
- 32. Serve the fries topped with the chili and cheese sauce.
- 33. Sprinkle the dish with the prepared coriander leaves.
- 34. Serve the fries and enjoy your meal!
