🍰 Vegan Brownies with Mulled Wine Cherries

Ingredients
- Soft dates, dried and pitted 300 g
- Bananas 1 pc.
- Oat drink 500 ml
- Wheat flour, Type 405 400 g
- Baking powder 2 tsp
- Vanilla sugar 1 packet
- Cocoa powder 90 g
- Cinnamon 1 tsp
- Hazelnut kernels, chopped and roasted 40 g
- Sour cherries in a jar 350 g
- Cornstarch 2 tsp
- Red wine, dry 100 ml
- Maple syrup 60 ml
- Gingerbread spice mix 1 tsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Roughly chop the dates.
- 3. Peel the banana.
- 4. Place the dates and banana in a tall container.
- 5. Pour in the oat drink.
- 6. Blend the mixture until smooth.
- 7. Take a bowl.
- 8. Add the flour to the bowl.
- 9. Add the baking powder to the bowl.
- 10. Add the vanilla sugar to the bowl.
- 11. Add the cocoa powder to the bowl.
- 12. Add the cinnamon to the bowl.
- 13. Stir the dry ingredients well.
- 14. Add the date-oat mixture to the dry ingredients.
- 15. Mix everything thoroughly.
- 16. Line a baking frame with baking paper.
- 17. Spread the batter evenly in the baking frame.
- 18. Sprinkle the chopped hazelnuts over the top.
- 19. Bake the brownies for approx. 30 minutes in the oven.
- 20. Drain the cherries into a sieve.
- 21. Catch the cherry juice.
- 22. Take a small bowl.
- 23. Add 5 tablespoons of cherry juice to the bowl.
- 24. Stir the cornstarch into the cherry juice.
- 25. Take a pot.
- 26. Pour the red wine into the pot.
- 27. Add 100 milliliters of the remaining cherry juice to the pot.
- 28. Add the maple syrup to the pot.
- 29. Add the gingerbread spice to the pot.
- 30. Bring the liquid to a boil.
- 31. Add the cherries to the pot.
- 32. Bring the mixture to a boil again briefly.
- 33. Stir in the cornstarch-cherry juice mixture.
- 34. Simmer the mulled wine cherries for approx. 2 minutes.
- 35. Set the mulled wine cherries aside to cool.
- 36. Take the finished brownies out of the oven.
- 37. Portion the brownies while they are still warm.
- 38. Plate the brownies.
- 39. Add the mulled wine cherries.
- 40. Serve the brownies lukewarm.
