  1. 1. Preheat your oven to 170 degrees Celsius with top and bottom heat.
  2. 2. Grind the flaxseeds finely.
  3. 3. Mix the ground flaxseeds with water.
  4. 4. Let the flaxseed mixture sit for ten minutes until it becomes thick and viscous.
  5. 5. Cut the chocolate into pieces.
  6. 6. Place a bowl with the chocolate over a pot of warm, but not boiling, water.
  7. 7. Melt the chocolate slowly while stirring.
  8. 8. Put the margarine, brown sugar, vanilla extract, and salt into a separate bowl.
  9. 9. Beat the margarine mixture for five to six minutes until creamy.
  10. 10. Add the soaked flaxseeds to the margarine mixture.
  11. 11. Add the melted chocolate to the margarine mixture.
  12. 12. Grate the zucchini finely.
  13. 13. Mash the banana with a fork.
  14. 14. Mix the grated zucchini and mashed banana into the batter.
  15. 15. Mix the flour with the cocoa powder and baking powder.
  16. 16. Sift the flour mixture over the batter.
  17. 17. Gently fold in the flour mixture until a homogeneous batter forms.
  18. 18. Pour the batter into a prepared baking pan.
  19. 19. Bake the brownies in the preheated oven until done.
  20. 20. Chop the 80 grams of chocolate for the glaze finely.
  21. 21. Mix the chopped chocolate with the hot espresso over a warm water bath.
  22. 22. Stir the chocolate mixture until it is completely melted and smooth.
  23. 23. Pour the liquid chocolate glaze over the still warm brownies.
  24. 24. Spread the glaze evenly over the surface.
  25. 25. Sprinkle fleur de sel (fleur de sel is fine, hand-picked sea salt) over the top if desired.
  26. 26. Let the brownies cool for about one hour.
  27. 27. Remove the baking frame carefully.
  28. 28. Cut the brownies into portions and serve them.
