🍰 Vegan Brownies

Ingredients
- flaxseeds, whole 2 tbsp
- water 6 tbsp
- margarine, vegan 100 g
- brown sugar 150 g
- vanilla extract 1 tsp
- salt pinch
- chocolate, dark 205 g
- zucchini 300 g
- bananas 100 g
- wheat flour, Type 405 180 g
- cocoa powder 50 g
- baking powder 1.5 tsp
- oat drink 100 ml
- cashew nuts 100 g
- espresso 40 g
- sea salt pinch
Instructions
- 1. Preheat your oven to 170 degrees Celsius with top and bottom heat.
- 2. Grind the flaxseeds finely.
- 3. Mix the ground flaxseeds with water.
- 4. Let the flaxseed mixture sit for ten minutes until it becomes thick and viscous.
- 5. Cut the chocolate into pieces.
- 6. Place a bowl with the chocolate over a pot of warm, but not boiling, water.
- 7. Melt the chocolate slowly while stirring.
- 8. Put the margarine, brown sugar, vanilla extract, and salt into a separate bowl.
- 9. Beat the margarine mixture for five to six minutes until creamy.
- 10. Add the soaked flaxseeds to the margarine mixture.
- 11. Add the melted chocolate to the margarine mixture.
- 12. Grate the zucchini finely.
- 13. Mash the banana with a fork.
- 14. Mix the grated zucchini and mashed banana into the batter.
- 15. Mix the flour with the cocoa powder and baking powder.
- 16. Sift the flour mixture over the batter.
- 17. Gently fold in the flour mixture until a homogeneous batter forms.
- 18. Pour the batter into a prepared baking pan.
- 19. Bake the brownies in the preheated oven until done.
- 20. Chop the 80 grams of chocolate for the glaze finely.
- 21. Mix the chopped chocolate with the hot espresso over a warm water bath.
- 22. Stir the chocolate mixture until it is completely melted and smooth.
- 23. Pour the liquid chocolate glaze over the still warm brownies.
- 24. Spread the glaze evenly over the surface.
- 25. Sprinkle fleur de sel (fleur de sel is fine, hand-picked sea salt) over the top if desired.
- 26. Let the brownies cool for about one hour.
- 27. Remove the baking frame carefully.
- 28. Cut the brownies into portions and serve them.
