🍰 Vegan Cookie Cutouts

Ingredients
- spreadable fat 80 g
- sugar 80 g
- salt pinch
- wheat flour, Type 405 170 g
- baking powder 1 tsp
- lemons 1 pc.
- powdered sugar 100 g
- sugar pearls 25 g
Instructions
- 1. Take the spread out of the fridge to let it soften slightly.
- 2. Place the spread, sugar, salt, wheat flour, and baking powder into a bowl.
- 3. Knead the ingredients into a smooth dough.
- 4. Wrap the dough in cling film.
- 5. Place the dough in the fridge for at least one hour.
- 6. Preheat the oven to 175 °C (top and bottom heat).
- 7. Lightly dust a work surface with flour.
- 8. Roll out the dough on the floured surface to a thickness of about 4 mm.
- 9. Cut out various shapes from the dough.
- 10. Place the cookies on a baking sheet lined with baking paper.
- 11. Bake the cookies in the oven for about 10 to 12 minutes.
- 12. Remove the cookies when the edges are golden brown.
- 13. Let the cookies cool on a wire rack.
- 14. Wash a lemon thoroughly.
- 15. Cut the lemon in half.
- 16. Squeeze the juice from the lemon.
- 17. Sift powdered sugar into a bowl.
- 18. Mix the powdered sugar with 2 tablespoons of lemon juice to form a thick icing.
- 19. Fill the icing into a freezer bag.
- 20. Seal the freezer bag.
- 21. Cut off a small corner of the freezer bag.
- 22. Decorate the cooled cookies creatively with the icing.
- 23. Decorate the cookies with sugar pearls if desired.
- 24. Let the icing dry thoroughly.
- 25. Serve the cookies.
