  1. 1. Mix sugar, flour, baking powder, and a pinch of salt in a bowl.
  2. 2. Stir in apple puree and soy milk using a whisk.
  3. 3. Wash the lemon and grate some zest.
  4. 4. Cut the lemon in half and squeeze the juice from one half.
  5. 5. Add the lemon juice and zest to the batter.
  6. 6. Let the batter rest for about 15 minutes.
  7. 7. Peel and wash the apples.
  8. 8. Cut the apples into quarters and remove the cores.
  9. 9. Cut the apple quarters in half lengthwise.
  10. 10. Slice the apple halves crosswise into thin slices.
  11. 11. Gently fold the apple slices into the batter.
  12. 12. Heat 1 tablespoon of oil in a pan over medium heat.
  13. 13. Take a spoonful of batter and place it in the hot pan.
  14. 14. Fry the pancakes until golden brown on both sides.
  15. 15. Repeat the process with the remaining batter.
