🍰 Vegan Apple Pancakes

Ingredients
- sugar 4 tbsp
- wheat flour, Type 405 350 g
- baking powder 0.5 packet
- salt pinch
- apple sauce 2 tbsp
- soy drink vanilla 350 ml
- organic lemon 0.5 pc.
- apples, red 2 pc.
- oil 3 tbsp
Instructions
- 1. Mix sugar, flour, baking powder, and a pinch of salt in a bowl.
- 2. Stir in apple puree and soy milk using a whisk.
- 3. Wash the lemon and grate some zest.
- 4. Cut the lemon in half and squeeze the juice from one half.
- 5. Add the lemon juice and zest to the batter.
- 6. Let the batter rest for about 15 minutes.
- 7. Peel and wash the apples.
- 8. Cut the apples into quarters and remove the cores.
- 9. Cut the apple quarters in half lengthwise.
- 10. Slice the apple halves crosswise into thin slices.
- 11. Gently fold the apple slices into the batter.
- 12. Heat 1 tablespoon of oil in a pan over medium heat.
- 13. Take a spoonful of batter and place it in the hot pan.
- 14. Fry the pancakes until golden brown on both sides.
- 15. Repeat the process with the remaining batter.
