🍰 Vegan Apple Cinnamon Rolls

Ingredients
- soy drink 250 ml
- yeast, fresh 0.5 pcs
- brown sugar 130 g
- margarine, vegan 180 g
- wheat flour, Type 405 600 g
- salt pinch
- apples, red 1 pcs
- cinnamon 1 tsp
- lemons 1 pcs
- powdered sugar 80 g
Instructions
- 1. Warm up 250 milliliters of soy drink in a pot until it is lukewarm.
- 2. Crumble the yeast into the lukewarm soy drink.
- 3. Stir 1 tablespoon of raw cane sugar into the yeast mixture.
- 4. Let the mixture rise covered for approx. 10 minutes.
- 5. Mix 80 grams of raw cane sugar, 100 grams of margarine, 600 grams of flour, and a pinch of salt in a bowl.
- 6. Knead the ingredients into a smooth dough.
- 7. Let the dough rise covered for approx. 1 hour.
- 8. Quarter the apples and remove the core and seeds.
- 9. Dice the apples finely.
- 10. Mix 80 grams of soft margarine with 50 grams of raw cane sugar and 1 teaspoon of cinnamon in a bowl.
- 11. Fold in the apple cubes into the cinnamon-margarine mixture.
- 12. Sprinkle some flour on a work surface.
- 13. Roll out the dough into a thin rectangle.
- 14. Spread the apple-cinnamon margarine over the dough.
- 15. Roll the dough up lengthwise.
- 16. Cut the dough roll into approx. 3 centimeter thick snails.
- 17. Grease a baking dish or casserole dish.
- 18. Place the snails in the dish with some space between them.
- 19. Let the snails rise again for approx. 30 minutes.
- 20. Preheat the oven to 180 degrees fan.
- 21. Bake the snails for approx. 25 to 30 minutes until golden yellow.
- 22. Halve the lemon and squeeze out the juice.
- 23. Mix 80 grams of powdered sugar with 3 tablespoons of lemon juice in a bowl.
- 24. Take the cinnamon snails out of the oven.
- 25. Brush the warm snails with the lemon glaze.
- 26. Enjoy!
- 27. Tip: To cut the cinnamon snails, you can also use kitchen twine.
- 28. Place the twine under and over the dough roll and cross it.
- 29. Pull on the ends to cut the roll into pieces gradually.
- 30. This way, the snails keep their beautiful uniform shape.
