🍰 Vegan Chocolate Cookies

Ingredients
- vegan margarine 100 g
- sugar 60 g
- wheat flour, type 405 300 g
- vanilla pudding powder 1 packet
- baking powder 2 tsp
- applesauce 150 g
- oat drink 100 ml
- dark chocolate 200 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Beat the soft margarine in a bowl with a hand mixer until creamy.
- 3. Add the sugar gradually to the margarine and continue mixing.
- 4. Add flour, vanilla pudding powder, baking powder, apple puree, and oat drink.
- 5. Mix everything into a smooth dough.
- 6. Line two baking trays with baking paper.
- 7. Take round portions of dough using two tablespoons.
- 8. Place the portions on the trays with some space between them.
- 9. Bake the cookies for about 15 minutes until golden yellow.
- 10. Let the cookies cool down completely on a wire rack.
- 11. Bring about 500 milliliters of water to a boil in a small pot.
- 12. Chop the chocolate couverture roughly.
- 13. Place a bowl with the chocolate over the hot water (bain-marie).
- 14. Melt the chocolate while stirring.
- 15. Spread the melted chocolate over the cooled cookies.
- 16. Let the chocolate dry for about 15 minutes.
- 17. Serve the finished cookies.
