🍽️ Vegan stuffed potatoes

Ingredients
- potatoes, mainly firm 1 kg
- chives, fresh 10 g
- mustard 1 tbsp
- soy yogurt 4 tbsp
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Wash the potatoes thoroughly.
- 3. Poke the potatoes several times with a fork or a knife.
- 4. Place the potatoes on a baking sheet lined with baking paper.
- 5. Bake the potatoes in the oven for about 60 minutes.
- 6. Wash the chives while the potatoes are baking.
- 7. Shake the chives dry.
- 8. Cut the chives into fine rings.
- 9. Take the baked potatoes out of the oven.
- 10. Halve the potatoes lengthwise.
- 11. Scoop out the inside of the potatoes from the skin using a spoon.
- 12. Place the potato flesh into a bowl.
- 13. Mix the potato flesh with the chopped chives.
- 14. Add mustard and soy yogurt to the potato mixture.
- 15. Season the filling with salt and pepper.
- 16. Fill the mixture back into the empty potato skins.
- 17. Bake the stuffed potatoes again in the oven for about 20 minutes.
- 18. Carefully take the finished potatoes out of the oven.
- 19. Serve the potatoes hot.
