  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Wash the potatoes thoroughly.
  3. 3. Poke the potatoes several times with a fork or a knife.
  4. 4. Place the potatoes on a baking sheet lined with baking paper.
  5. 5. Bake the potatoes in the oven for about 60 minutes.
  6. 6. Wash the chives while the potatoes are baking.
  7. 7. Shake the chives dry.
  8. 8. Cut the chives into fine rings.
  9. 9. Take the baked potatoes out of the oven.
  10. 10. Halve the potatoes lengthwise.
  11. 11. Scoop out the inside of the potatoes from the skin using a spoon.
  12. 12. Place the potato flesh into a bowl.
  13. 13. Mix the potato flesh with the chopped chives.
  14. 14. Add mustard and soy yogurt to the potato mixture.
  15. 15. Season the filling with salt and pepper.
  16. 16. Fill the mixture back into the empty potato skins.
  17. 17. Bake the stuffed potatoes again in the oven for about 20 minutes.
  18. 18. Carefully take the finished potatoes out of the oven.
  19. 19. Serve the potatoes hot.
