🍰 Vanilla Pudding with Strawberry-Rhubarb Compote

Ingredients
- Rhubarb 500 g
- Strawberries 250 g
- Apple juice 100 ml
- Sugar 6 tbsp
- Milk 500 ml
- Vanilla pudding powder 1 packet
Instructions
- 1. Wash the rhubarb thoroughly, peel off the fibrous skin, and cut into small pieces. Wash the strawberries, remove the green tops, and quarter them.
- 2. In a pot, bring the rhubarb together with the apple juice and 2 tablespoons of sugar to a boil and cook until tender for about 5 minutes. Add the strawberries and adjust the seasoning of the compote.
- 3. In a bowl, mix 6 tablespoons of milk with 4 tablespoons of sugar and the vanilla pudding powder until well combined.
- 4. In a pot, heat the remaining milk until it boils. Stir the prepared pudding mixture into the boiling milk while stirring constantly and let it cook for about 1 minute. Then reduce the heat and simmer for about 4 minutes until the pudding reaches a creamy consistency.
- 5. Serve the vanilla pudding together with the strawberry-rhubarb compote lukewarm or cold in glasses. Enjoy your meal!
