  1. 1. Put sugar, vanilla sugar, and water into a pot.
  2. 2. Heat the mixture on medium heat.
  3. 3. Stir regularly until the syrup boils.
  4. 4. Boil the syrup for about 3 minutes until it is clear.
  5. 5. Soak leaf gelatin in cold water.
  6. 6. Squeeze the excess water off the gelatin.
  7. 7. Dissolve the gelatin in the lukewarm syrup.
  8. 8. Separate an egg and save the yolk for later use.
  9. 9. Whip the egg whites stiff using a hand mixer and whisk attachment.
  10. 10. Slowly add the syrup to the egg whites while stirring.
  11. 11. Continue beating the mixture until it is very foamy and stable.
  12. 12. Optionally divide the mixture into two halves.
  13. 13. Color one half with food coloring if desired.
  14. 14. Fill the foam mixture into a rectangular mold in two layers.
  15. 15. Smooth the surface.
  16. 16. Let the marshmallows set covered in the refrigerator for about 4 hours.
  17. 17. Turn the mixture out onto a wooden board.
  18. 18. Cut the marshmallows into cubes with a sharp knife.
  19. 19. Serve the vanilla marshmallows as a dessert or gift.
  20. 20. Store the marshmallows airtight in the refrigerator.
  21. 21. Enjoy them within 7 days.
