🍰 Homemade Vanilla Marshmallows

Ingredients
- sugar 225 g
- vanilla sugar 80 g
- water 100 ml
- leaf gelatin 16 g
- eggs 1 pcs
- food coloring, red 1 tsp
Instructions
- 1. Put sugar, vanilla sugar, and water into a pot.
- 2. Heat the mixture on medium heat.
- 3. Stir regularly until the syrup boils.
- 4. Boil the syrup for about 3 minutes until it is clear.
- 5. Soak leaf gelatin in cold water.
- 6. Squeeze the excess water off the gelatin.
- 7. Dissolve the gelatin in the lukewarm syrup.
- 8. Separate an egg and save the yolk for later use.
- 9. Whip the egg whites stiff using a hand mixer and whisk attachment.
- 10. Slowly add the syrup to the egg whites while stirring.
- 11. Continue beating the mixture until it is very foamy and stable.
- 12. Optionally divide the mixture into two halves.
- 13. Color one half with food coloring if desired.
- 14. Fill the foam mixture into a rectangular mold in two layers.
- 15. Smooth the surface.
- 16. Let the marshmallows set covered in the refrigerator for about 4 hours.
- 17. Turn the mixture out onto a wooden board.
- 18. Cut the marshmallows into cubes with a sharp knife.
- 19. Serve the vanilla marshmallows as a dessert or gift.
- 20. Store the marshmallows airtight in the refrigerator.
- 21. Enjoy them within 7 days.
