🍰 Vanilla Raspberry Parfait

Ingredients
- raspberries, fresh 700 g
- lemons 1 pc.
- powdered sugar 2 tbsp
- ladyfingers 50 g
- chocolate, white 50 g
- vanilla ice cream 1000 ml
Instructions
- 1. Rinse the raspberries thoroughly and sort out any bad ones if necessary, setting aside a handful for decoration. Halve the lemon and squeeze out the juice. In a tall container, puree the raspberries with powdered sugar and 2 tablespoons of lemon juice.
- 2. Roughly chop the ladyfingers and the chocolate. Take the vanilla ice cream out of the freezer and let it thaw slightly until it is nice and creamy.
- 3. In a bowl, mix half of the vanilla ice cream with half of the raspberry puree well and fill it into a loaf pan lined with plastic wrap.
- 4. Combine the remaining vanilla ice cream with the ladyfingers and chocolate and carefully layer it on top of the raspberry ice cream. Place in the freezer for 2 hours. Chill the remaining raspberry puree.
- 5. Evenly spread the raspberry puree over the frozen parfait and let the vanilla-raspberry parfait freeze completely for at least 8 hours or overnight.
- 6. Before serving, let the vanilla-raspberry thaw for about 5–10 minutes. Invert the parfait out of the pan, remove the plastic wrap, slice it and garnish with fresh raspberries. Enjoy your meal!
