  1. 1. Rinse the raspberries thoroughly and sort out any bad ones if necessary, setting aside a handful for decoration. Halve the lemon and squeeze out the juice. In a tall container, puree the raspberries with powdered sugar and 2 tablespoons of lemon juice.
  2. 2. Roughly chop the ladyfingers and the chocolate. Take the vanilla ice cream out of the freezer and let it thaw slightly until it is nice and creamy.
  3. 3. In a bowl, mix half of the vanilla ice cream with half of the raspberry puree well and fill it into a loaf pan lined with plastic wrap.
  4. 4. Combine the remaining vanilla ice cream with the ladyfingers and chocolate and carefully layer it on top of the raspberry ice cream. Place in the freezer for 2 hours. Chill the remaining raspberry puree.
  5. 5. Evenly spread the raspberry puree over the frozen parfait and let the vanilla-raspberry parfait freeze completely for at least 8 hours or overnight.
  6. 6. Before serving, let the vanilla-raspberry thaw for about 5–10 minutes. Invert the parfait out of the pan, remove the plastic wrap, slice it and garnish with fresh raspberries. Enjoy your meal!
