  4. 4. Remove the stem and the seeds.
  5. 5. Slice the fruit into evenly thin slices.
  6. 6. Divide the puff pastry into eight equal pieces.
  7. 7. Spread one teaspoon of cream cheese in the center of each pastry piece.
  8. 8. Separate one egg.
  9. 9. Lightly whisk the egg yolk.
  10. 10. Line a baking tray with baking paper.
  11. 11. Distribute eight teaspoons of honey individually on the baking paper.
  12. 12. Place the pear slices on the honey spots.
  13. 13. Place a pastry piece over the pear with the cream cheese side facing down.
  14. 14. Press the edges of the pastry lightly onto the baking paper.
  15. 15. Ensure that eight pastry pieces are lying on the paper.
  16. 16. Brush the tartlets with the whisked egg yolk.
  17. 17. Place the tray in the lower third of the oven.
  18. 18. Bake the tartlets for about 20 minutes until golden brown.
  19. 19. Wash a lemon thoroughly with hot water.
  20. 20. Grate one teaspoon of lemon zest finely.
  21. 21. Cut the lemon in half.
  22. 22. Squeeze the juice from the lemon.
  23. 23. Put the remaining cream cheese into a bowl.
  24. 24. Mix the cream cheese with the lemon zest.
  25. 25. Add one teaspoon of lemon juice.

  27. 27. Take the tartlets out of the oven.
