🍽️ Crispy Sweet Potato Gratin

Ingredients
- sweet potatoes 6 pcs
- olive oil 2 tbsp
- salt pinch
- spring onions 0.5 bunch
- bacon strips 250 g
- cream cheese, plain 100 g
- pepper, black ground pinch
- Gouda, young block 150 g
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan setting.
- 2. Wash the sweet potatoes under running water.
- 3. Cut the sweet potatoes in half lengthwise.
- 4. Line a baking tray with baking paper.
- 5. Place the sweet potato halves on the tray with the cut side facing up.
- 6. Drizzle some olive oil over the potatoes.
- 7. Sprinkle some salt over them.
- 8. Put the tray in the oven and bake the potatoes for 25 minutes.
- 9. Wash the spring onions and shake them dry.
- 10. Slice the spring onions into small rings.
- 11. Fry the bacon in a pan over high heat for 2 minutes.
- 12. Add the spring onion rings to the pan.
- 13. Fry the vegetables and bacon together for 1 minute.
- 14. Remove the pan from the heat.
- 15. Transfer the bacon and spring onions into a bowl.
- 16. Add cream cheese to the bowl.
- 17. Season the mixture with salt and pepper.
- 18. Mix everything well together.
- 19. Grate the Gouda cheese finely.
- 20. Take the sweet potatoes out of the oven after 25 minutes.
- 21. Spread the bacon and cream cheese mixture over the sweet potatoes.
- 22. Sprinkle the grated Gouda over the top.
- 23. Put the tray back into the oven.
- 24. Bake the dishes for another 15 minutes.
- 25. Remove the sweet potatoes when they are golden brown.
- 26. Serve the baked sweet potatoes hot.
