  1. 1. Preheat the oven to 200 degrees Celsius with fan setting.
  2. 2. Wash the sweet potatoes under running water.
  3. 3. Cut the sweet potatoes in half lengthwise.
  4. 4. Line a baking tray with baking paper.
  5. 5. Place the sweet potato halves on the tray with the cut side facing up.
  6. 6. Drizzle some olive oil over the potatoes.
  7. 7. Sprinkle some salt over them.
  8. 8. Put the tray in the oven and bake the potatoes for 25 minutes.
  9. 9. Wash the spring onions and shake them dry.
  10. 10. Slice the spring onions into small rings.
  11. 11. Fry the bacon in a pan over high heat for 2 minutes.
  12. 12. Add the spring onion rings to the pan.
  13. 13. Fry the vegetables and bacon together for 1 minute.
  14. 14. Remove the pan from the heat.
  15. 15. Transfer the bacon and spring onions into a bowl.
  16. 16. Add cream cheese to the bowl.
  17. 17. Season the mixture with salt and pepper.
  18. 18. Mix everything well together.
  19. 19. Grate the Gouda cheese finely.
  20. 20. Take the sweet potatoes out of the oven after 25 minutes.
  21. 21. Spread the bacon and cream cheese mixture over the sweet potatoes.
  22. 22. Sprinkle the grated Gouda over the top.
  23. 23. Put the tray back into the oven.
  24. 24. Bake the dishes for another 15 minutes.
  25. 25. Remove the sweet potatoes when they are golden brown.
  26. 26. Serve the baked sweet potatoes hot.
