  1. 1. Preheat the oven to 220 degrees Celsius using the top and bottom heat setting.
  2. 2. Wash the bell peppers thoroughly under running water.
  3. 3. Cut the peppers in half lengthwise.
  4. 4. Remove the seeds and the white pith from the inside of the halves.
  5. 5. Brush the pepper halves with some oil.
  6. 6. Lightly salt the peppers.
  7. 7. Place the halves on a baking sheet with the cut side facing up.
  8. 8. Place the tray in the upper part of the oven.
  9. 9. Roast the peppers for about 5 minutes.
  10. 10. Remove the peppers when they are slightly soft.
  11. 11. Halve the shallots.
  12. 12. Peel the shallots and remove the outer skin.
  13. 13. Cut the shallots into thin strips.
  14. 14. Put the shallots into a bowl.
  15. 15. Pour vinegar over the shallots.
  16. 16. Add sugar to the shallots.
  17. 17. Mix everything thoroughly so the shallots can marinate.
  18. 18. Set the bowl aside.
  19. 19. Take the feta cheese out of the packaging.
  20. 20. Crumble the feta into small pieces using your hands.
  21. 21. Put the crumbled feta into a clean bowl.
  22. 22. Add Gouda cheese to the bowl.
  23. 23. Season the cheese mixture with some pepper.
  24. 24. Mix the feta, Gouda, and pepper well.
  25. 25. Take the peppers out of the oven.
  26. 26. Carefully turn over the pepper halves.
  27. 27. Fill the pepper halves with the cheese mixture.
  28. 28. Place the stuffed peppers back into the oven.
  29. 29. Bake the peppers for another 10 minutes.
  30. 30. Remove the peppers when the cheese is melted and golden brown.
  31. 31. Take the finished peppers out of the oven.
  32. 32. Place the peppers on a serving plate.
  33. 33. Drizzle the shallot dressing over the peppers.
  34. 34. Season to taste with additional pepper if desired.
  35. 35. Serve the dishes warm.
