  2. 2. Mix the yeast with the sugar and 50 milliliters of lukewarm water.
  3. 3. Let the mixture rest for ten minutes, covered.
  4. 4. Separate the egg into yolk and white.
  5. 5. Keep the yolk cool.
  6. 6. Mix the egg white thoroughly with the yogurt and oil.
  7. 7. Knead the yogurt-egg mixture with the flour, salt, and yeast water into a smooth dough.
  8. 8. Let the dough rise, covered, in a warm place for about 30 minutes.
  9. 9. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  10. 10. Clean the spring onions and slice them into thin rings.
  11. 11. Rinse the bell pepper under running water.
  12. 12. Remove the stem and seeds from the bell pepper.
  13. 13. Cut the bell pepper into cubes of about 0.5 centimeters.
  14. 14. Crumble the feta cheese.
  15. 15. Mix the feta with the spring onions and bell pepper.
  16. 16. Season the filling with pepper, paprika powder, and oregano.
  17. 17. Roll out the dough thinly on a floured surface.
  18. 18. Cut out about 16 circles with a diameter of 12 centimeters.
  19. 19. Distribute the filling evenly over the dough circles.
  20. 20. Fold the dough into half-circles.
  21. 21. Stretch the dough slightly while doing so.

  23. 23. Place the pastries on a baking sheet lined with baking paper.
