🍽️ Turkish Pastries with Feta and Bell Pepper

Ingredients
- yeast, fresh 10 g
- sugar 0.5 tsp
- water 50 ml
- eggs 1 pc.
- yogurt, plain 100 g
- olive oil 75 ml
- wheat flour, Type 405 300 g
- salt 0.5 tsp
- spring onions 1 bunch
- pepper, red 1 pc.
- feta 300 g
- pepper, black ground pinch
- paprika, sweet 0.5 tsp
- oregano, dried 0.5 tsp
Instructions
- 1. Crumble the yeast into a bowl.
- 2. Mix the yeast with the sugar and 50 milliliters of lukewarm water.
- 3. Let the mixture rest for ten minutes, covered.
- 4. Separate the egg into yolk and white.
- 5. Keep the yolk cool.
- 6. Mix the egg white thoroughly with the yogurt and oil.
- 7. Knead the yogurt-egg mixture with the flour, salt, and yeast water into a smooth dough.
- 8. Let the dough rise, covered, in a warm place for about 30 minutes.
- 9. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 10. Clean the spring onions and slice them into thin rings.
- 11. Rinse the bell pepper under running water.
- 12. Remove the stem and seeds from the bell pepper.
- 13. Cut the bell pepper into cubes of about 0.5 centimeters.
- 14. Crumble the feta cheese.
- 15. Mix the feta with the spring onions and bell pepper.
- 16. Season the filling with pepper, paprika powder, and oregano.
- 17. Roll out the dough thinly on a floured surface.
- 18. Cut out about 16 circles with a diameter of 12 centimeters.
- 19. Distribute the filling evenly over the dough circles.
- 20. Fold the dough into half-circles.
- 21. Stretch the dough slightly while doing so.
- 22. Press the edges firmly.
- 23. Place the pastries on a baking sheet lined with baking paper.
- 24. Lightly whisk the egg yolk.
- 25. Brush the pastries with the egg yolk.
- 26. Bake the pastries in the preheated oven for about 20 to 25 minutes.
- 27. Serve the Turkish pastries warm or cooled.
