  1. 1. Fill a large pot with about 5 liters of water and add salt. Place the pot on the stove and bring the water to a boil.
  2. 2. Wash the cherry tomatoes under running water. Then cut them into quarters.
  3. 3. Wash the arugula thoroughly. Then dry the leaves well with a kitchen towel or a salad spinner.
  4. 4. Rinse the lemon under hot water. Grate about 1 teaspoon of the fine peel from the lemon.
  5. 5. Add the tortelloni to the boiling salted water. Cook them for about 3 minutes until they are soft.
  6. 6. Drain the tortelloni in a colander. Let them drain well there.
  7. 7. Heat the oil in a pan over medium heat.
  8. 8. Fry the bacon strips in the pan for about 3 to 4 minutes until they are crispy.
  9. 9. Add the drained tortelloni to the pan. Fry them for about 2 minutes together with the bacon.
  10. 10. Put the crème fraîche into a small bowl. Mix it with the grated lemon peel.
  11. 11. Season the lemon cream with salt and pepper to taste.
  12. 12. Add the arugula and the cherry tomato quarters to the tortelloni in the pan.
  13. 13. Toss everything for about 1 minute in the hot pan until the arugula wilts slightly.
  14. 14. Plate the tortelloni. Distribute the crispy ham and the arugula on top.
  15. 15. Garnish the dish with the lemon cream and serve immediately.
  16. 16. Tip: Vegetarians can skip the bacon. Instead, toast pine nuts in the pan without fat for 2 to 3 minutes.
