🍰 Crispy Ham with Tortelloni and Arugula

Ingredients
- Salt pinch
- Cherry tomatoes 250 g
- Arugula 125 g
- Lemons 1 pc
- Tortelloni, whole grain 750 g
- Oil 1 tbsp
- Bacon strips 100 g
- Crème Fraîche 200 g
- Pepper, black ground pinch
Instructions
- 1. Fill a large pot with about 5 liters of water and add salt. Place the pot on the stove and bring the water to a boil.
- 2. Wash the cherry tomatoes under running water. Then cut them into quarters.
- 3. Wash the arugula thoroughly. Then dry the leaves well with a kitchen towel or a salad spinner.
- 4. Rinse the lemon under hot water. Grate about 1 teaspoon of the fine peel from the lemon.
- 5. Add the tortelloni to the boiling salted water. Cook them for about 3 minutes until they are soft.
- 6. Drain the tortelloni in a colander. Let them drain well there.
- 7. Heat the oil in a pan over medium heat.
- 8. Fry the bacon strips in the pan for about 3 to 4 minutes until they are crispy.
- 9. Add the drained tortelloni to the pan. Fry them for about 2 minutes together with the bacon.
- 10. Put the crème fraîche into a small bowl. Mix it with the grated lemon peel.
- 11. Season the lemon cream with salt and pepper to taste.
- 12. Add the arugula and the cherry tomato quarters to the tortelloni in the pan.
- 13. Toss everything for about 1 minute in the hot pan until the arugula wilts slightly.
- 14. Plate the tortelloni. Distribute the crispy ham and the arugula on top.
- 15. Garnish the dish with the lemon cream and serve immediately.
- 16. Tip: Vegetarians can skip the bacon. Instead, toast pine nuts in the pan without fat for 2 to 3 minutes.
