  2. 2. Halve the garlic cloves, peel them, and chop them finely.
  3. 3. Heat one tablespoon of oil in a pan over low to medium heat.
  4. 4. Sauté the onion cubes together with one teaspoon of sugar for about three minutes.
  5. 5. Add the chopped garlic and cook it for another minute.
  6. 6. Add the chunky tomatoes to the pan.
  7. 7. Bring the mixture to a boil.
  8. 8. Reduce the heat and let the sauce simmer at low temperature for about twenty minutes.
  9. 9. Stir the sauce occasionally.
  10. 10. Make sure the sauce does not bubble too vigorously.
  11. 11. Bring about four liters of salted water to a boil in a large pot.
  12. 12. Cover the pot.
  13. 13. Wash the fresh basil.
  14. 14. Shake the basil dry.
  15. 15. Pluck the leaves from the stems.
  16. 16. Chop the basil leaves finely.
  17. 17. Wait about ten minutes until the sauce has cooked.
  18. 18. Add one tablespoon of balsamic vinegar to the sauce.

  20. 20. Add one teaspoon of sugar to the sauce.
  21. 21. Add the saved basil stems to the sauce.
  22. 22. Add the mozzarella basil tortelloni to the boiling salted water.
  23. 23. Cook the tortelloni for about five minutes until they are al dente.
  24. 24. Make sure the water is only simmering gently.
  25. 25. Drain the tortelloni in a colander.
  26. 26. Save about one cup of the cooking water.
  27. 27. Remove the basil stems from the tomato sauce.
  28. 28. Stir about fifty milliliters of the cooking water into the sauce.
  29. 29. Fold the tortelloni into the sauce.
  30. 30. Add half of the chopped basil leaves to the sauce.
