🍰 Caprese Tortelloni in Fresh Tomato Sauce with Basil

Ingredients
- yellow onions 1 pc.
- garlic cloves 1 pc.
- oil 1 tbsp.
- sugar 2 tsp.
- tomatoes, chopped 400 g
- salt pinch
- basil, fresh 10 g
- balsamic vinegar, light 1 tbsp.
- tortelloni with tomato-mozzarella, fresh 800 g
- pepper, black ground pinch
Instructions
- 1. Peel the onion and cut it into fine cubes.
- 2. Halve the garlic cloves, peel them, and chop them finely.
- 3. Heat one tablespoon of oil in a pan over low to medium heat.
- 4. Sauté the onion cubes together with one teaspoon of sugar for about three minutes.
- 5. Add the chopped garlic and cook it for another minute.
- 6. Add the chunky tomatoes to the pan.
- 7. Bring the mixture to a boil.
- 8. Reduce the heat and let the sauce simmer at low temperature for about twenty minutes.
- 9. Stir the sauce occasionally.
- 10. Make sure the sauce does not bubble too vigorously.
- 11. Bring about four liters of salted water to a boil in a large pot.
- 12. Cover the pot.
- 13. Wash the fresh basil.
- 14. Shake the basil dry.
- 15. Pluck the leaves from the stems.
- 16. Chop the basil leaves finely.
- 17. Wait about ten minutes until the sauce has cooked.
- 18. Add one tablespoon of balsamic vinegar to the sauce.
- 19. Season the sauce with a pinch of salt.
- 20. Add one teaspoon of sugar to the sauce.
- 21. Add the saved basil stems to the sauce.
- 22. Add the mozzarella basil tortelloni to the boiling salted water.
- 23. Cook the tortelloni for about five minutes until they are al dente.
- 24. Make sure the water is only simmering gently.
- 25. Drain the tortelloni in a colander.
- 26. Save about one cup of the cooking water.
- 27. Remove the basil stems from the tomato sauce.
- 28. Stir about fifty milliliters of the cooking water into the sauce.
- 29. Fold the tortelloni into the sauce.
- 30. Add half of the chopped basil leaves to the sauce.
- 31. Season the mixture with pepper.
- 32. Season the mixture with salt.
- 33. Season the mixture with sugar.
- 34. Plate the Caprese tortelloni on deep plates.
- 35. Sprinkle the dishes with the remaining basil leaves.
