  1. 1. Peel the onion and garlic. Dice both ingredients very finely.
  2. 2. Peel the carrots. Grate them finely.
  3. 3. Wash the zucchini. Grate it finely as well.
  4. 4. Wash the fresh spinach thoroughly. Spin it dry. Remove any tough stems.
  5. 5. Heat the olive oil in a deep pan.
  6. 6. Sauté the onions and garlic for about 2 minutes over medium heat.
  7. 7. Add the tomato paste. Let it sizzle briefly.
  8. 8. Add the grated carrots and zucchini.
  9. 9. Steam the vegetables for about 3 minutes with a lid on.
  10. 10. Add the chopped tomatoes and vegetable broth.
  11. 11. Let the sauce simmer for about 5 minutes on medium heat.
  12. 12. Bring water to a boil in a large pot. Add salt.
  13. 13. Add the washed spinach to the sauce.
  14. 14. Stir in the spinach. Let it wilt.
  15. 15. Remove the sauce from the heat.
  16. 16. Blend the sauce finely with an immersion blender.
  17. 17. Ensure no vegetable pieces are visible anymore.
  18. 18. Season the sauce with salt and pepper.
  19. 19. Add the tortelloni to the boiling salted water.
  20. 20. Cook the tortelloni for about 3 minutes.
  21. 21. Wash the parsley in the meantime.
  22. 22. Shake the parsley dry.
  23. 23. Pluck the parsley leaves off the stems.
  24. 24. Finely chop the parsley leaves.
  25. 25. Drain the tortelloni in a colander.
  26. 26. Place the tortelloni in a large baking dish.
  27. 27. Cover the tortelloni with the sauce.
  28. 28. Sprinkle grated cheese over the top.
  29. 29. Preheat the oven.
  30. 30. Place the baking dish on the top rack.
  31. 31. Gratin the bake for about 5 to 10 minutes in the oven.
  32. 32. Serve the bake on plates.
  33. 33. Sprinkle parsley on top.
  34. 34. Serve the dish.
