  1. 1. In a large pot, bring about 5 liters of salted water to a boil. Peel the garlic and slice it thinly. Drain the olives and halve them.
  2. 2. In another pot, heat the olive oil over medium heat and sweat the garlic in it for about 2 minutes. Then deglaze with chopped tomatoes, season with salt, pepper, sugar, and oregano, and simmer for about 5 minutes.
  3. 3. Cook the tortellini in the boiling salted water for about 5 minutes until they rise to the surface, then drain them in a sieve. Wash the basil, shake off excess water, remove the thick stems, and cut into fine strips. Coarsely grate the Parmesan.
  4. 4. Add the olives and tortellini to the tomato sauce in the pot and mix well. Plate the dish and garnish with basil and Parmesan. Enjoy your meal!
