🍰 Crispy Bacon Tortellini with Creamy Spinach Sauce

Ingredients
- salt pinch
- spinach leaves 500 g
- spring onions 1 bunch
- oil 1 tbsp
- bacon strips 125 g
- dry white wine 200 ml
- whipping cream 200 g
- tortellini with herb cream cheese filling, fresh 500 g
- pepper, black ground pinch
- parmesan, grated 80 g
Instructions
- 1. Fill a large pot with about 5 liters of water and add salt. Heat the water until it boils vigorously.
- 2. Thoroughly rinse the spinach under running water. Let the water drain off completely.
- 3. Clean the spring onions and cut off the root ends. Slice the onions into thin rings, about half a centimeter thick.
- 4. Heat oil in a large pan over medium heat.
- 5. Add the bacon strips and the white parts of the spring onions to the pan. Sauté everything for about 3 minutes.
- 6. Deglaze the pan with white wine. Let the mixture come to a boil for about 1 minute.
- 7. Stir the cream into the pan. Add the drained spinach and the green parts of the spring onions.
- 8. Let the sauce simmer over medium heat for about 3 minutes until the spinach wilts.
- 9. Add the tortellini to the boiling salted water. Cook them for about 5 minutes until they float to the surface.
- 10. Drain the tortellini in a colander. Reserve about one cup of the cooking water.
- 11. Season the spinach cream sauce with salt and pepper to taste.
- 12. Add the drained tortellini to the sauce. Mix everything well together.
- 13. If the sauce is too thick, stir in some of the reserved cooking water.
- 14. Serve the tortellini on plates. Sprinkle the dish with grated Parmesan cheese.
