  1. 1. Fill a large pot with about 5 liters of water and add salt. Heat the water until it boils vigorously.
  2. 2. Thoroughly rinse the spinach under running water. Let the water drain off completely.
  3. 3. Clean the spring onions and cut off the root ends. Slice the onions into thin rings, about half a centimeter thick.
  4. 4. Heat oil in a large pan over medium heat.
  5. 5. Add the bacon strips and the white parts of the spring onions to the pan. Sauté everything for about 3 minutes.
  6. 6. Deglaze the pan with white wine. Let the mixture come to a boil for about 1 minute.
  7. 7. Stir the cream into the pan. Add the drained spinach and the green parts of the spring onions.
  8. 8. Let the sauce simmer over medium heat for about 3 minutes until the spinach wilts.
  9. 9. Add the tortellini to the boiling salted water. Cook them for about 5 minutes until they float to the surface.
  10. 10. Drain the tortellini in a colander. Reserve about one cup of the cooking water.
  11. 11. Season the spinach cream sauce with salt and pepper to taste.
  12. 12. Add the drained tortellini to the sauce. Mix everything well together.
  13. 13. If the sauce is too thick, stir in some of the reserved cooking water.
  14. 14. Serve the tortellini on plates. Sprinkle the dish with grated Parmesan cheese.
