🍝 Pasta with Chicken, Spinach, and Tomato Sauce in One Pot

Ingredients
- chicken breast fillets 600 g
- onions, yellow 1 pc.
- leaf spinach 200 g
- oil 4 tbsp
- tomato paste 3 tbsp
- wheat flour, Type 405 1 tbsp
- vegetable broth 1 L
- macaroni 500 g
- salt pinch
- pepper, black ground pinch
- parmesan, grated 4 tbsp
Instructions
- 1. Wash the chicken breast fillets thoroughly, pat dry, and cut into cubes. Halve the onions, peel, and dice finely. Rinse the spinach, drain in a colander, and chop coarsely.
- 2. Heat the oil in a pot over high heat and brown the chicken pieces together with the onions for about 3 minutes. Add the tomato paste to the chicken, dust with flour, and mix well. Then top up with broth and bring to a brief boil.
- 3. Add the macaroni and cook over medium heat, stirring occasionally, for approx. 8 minutes. Stir in the spinach, let it wilt, and cover and let sit for about 1 minute. Season with salt and pepper.
- 4. Plate the pasta, sprinkle with freshly grated parmesan, and serve. Enjoy your meal!
