  1. 1. Cut the chorizo lengthwise.
  2. 2. Remove the meat from the casing and break it into coarse pieces.
  3. 3. Halve the onion, peel it, and dice it into cubes.
  4. 4. Wash the bell pepper, halve it, remove the stem and seeds, and dice it finely.
  5. 5. Wash the thyme, shake it dry, and strip the leaves from the stems.
  6. 6. Heat oil in a pot over high heat.
  7. 7. Fry the onions and chorizo in it for about 2 minutes.
  8. 8. Add the tomato paste and thyme and fry everything for another minute.
  9. 9. Add the rice.
  10. 10. Deglaze the mixture with the chopped tomatoes and 400 milliliters of broth.
  11. 11. Simmer the rice covered for about 15 minutes.
  12. 12. Mix the bell pepper into the rice.
  13. 13. Let it simmer on low heat for about 3 minutes.
  14. 14. Wash the cherry tomatoes and quarter them.
  15. 15. Wash the parsley and shake it dry.
  16. 16. Strip the leaves from the stems and chop them finely.
  17. 17. Season the tomato rice with salt and pepper to taste.
  18. 18. Serve the rice on plates.
  19. 19. Garnish the dish with the fresh cherry tomatoes and parsley.
