🍽️ Tomato Rice with Fried Sausage

Ingredients
- Chorizo 4 pcs
- onions, red 1 pcs
- peppers, red 1 pcs
- thyme, fresh 5 g
- oil 2 tbsp
- tomato paste 2 tbsp
- basmati rice 300 g
- tomatoes, chopped 300 g
- vegetable broth 400 ml
- cherry tomatoes mix 200 g
- parsley, fresh 10 g
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Cut the chorizo lengthwise.
- 2. Remove the meat from the casing and break it into coarse pieces.
- 3. Halve the onion, peel it, and dice it into cubes.
- 4. Wash the bell pepper, halve it, remove the stem and seeds, and dice it finely.
- 5. Wash the thyme, shake it dry, and strip the leaves from the stems.
- 6. Heat oil in a pot over high heat.
- 7. Fry the onions and chorizo in it for about 2 minutes.
- 8. Add the tomato paste and thyme and fry everything for another minute.
- 9. Add the rice.
- 10. Deglaze the mixture with the chopped tomatoes and 400 milliliters of broth.
- 11. Simmer the rice covered for about 15 minutes.
- 12. Mix the bell pepper into the rice.
- 13. Let it simmer on low heat for about 3 minutes.
- 14. Wash the cherry tomatoes and quarter them.
- 15. Wash the parsley and shake it dry.
- 16. Strip the leaves from the stems and chop them finely.
- 17. Season the tomato rice with salt and pepper to taste.
- 18. Serve the rice on plates.
- 19. Garnish the dish with the fresh cherry tomatoes and parsley.
