🍽️ Tomato Rice with Basil Meatballs

Ingredients
- tomatoes, chopped 400 g
- vegetable broth 300 ml
- rice, parboiled 300 g
- salt pinch
- sugar 1 tsp
- onions, yellow 1 pc.
- basil, fresh 50 g
- ground pork 600 g
- eggs 1 pc.
- breadcrumbs 2 tbsp
- oil 2 tbsp
- cherry tomatoes 250 g
Instructions
- 1. Put the chopped tomatoes and the broth into a pot.
- 2. Bring the mixture to a boil.
- 3. Add the rice to the pot.
- 4. Season with salt, pepper, and sugar.
- 5. Cover the pot with a lid.
- 6. Cook the rice on low to medium heat for about 10 minutes.
- 7. Halve the onion and peel it.
- 8. Finely dice the onion.
- 9. Wash the basil and dry it.
- 10. Pluck the basil leaves off the stems.
- 11. Finely chop the basil leaves.
- 12. Take half of the chopped basil.
- 13. Put the ground meat into a bowl.
- 14. Add the diced onion to the ground meat.
- 15. Add the egg to the bowl.
- 16. Add the breadcrumbs to the bowl.
- 17. Add half of the basil to the bowl.
- 18. Mix all ingredients well together.
- 19. Season the meat mixture with salt and pepper.
- 20. Shape the mixture into balls with a diameter of about 3 cm.
- 21. Put the oil into a pan.
- 22. Heat the oil over high heat.
- 23. Fry the meatballs in the hot oil.
- 24. Fry the balls until golden brown on all sides.
- 25. This takes about 6 to 8 minutes.
- 26. Wash the tomatoes.
- 27. Halve the tomatoes.
- 28. Add the tomatoes to the rice.
- 29. Adjust the seasoning of the rice if necessary.
- 30. Serve the tomato rice on plates.
- 31. Add the meatballs to the rice.
- 32. Sprinkle the dish with the remaining basil.
