🍳 Juicy Tomato and Mozzarella Muffins

Ingredients
- onions, yellow 2 pcs.
- garlic cloves 2 pcs.
- olive oil 4 tbsp
- vine tomatoes 300 g
- thyme, fresh 10 g
- mozzarella 250 g
- tomato paste 2 tbsp
- yogurt, plain 100 g
- eggs 1 pc.
- wheat flour, Type 405 250 g
- baking powder 1 tsp
- salt 1 tsp
- pepper, black ground pinch
- butter 1 tbsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Peel the onions and the garlic clove.
- 3. Dice the onions and garlic into very small cubes.
- 4. Heat two tablespoons of olive oil in a pan over medium heat.
- 5. Add the onions and garlic to the pan.
- 6. Sauté the vegetables for three to four minutes until they are soft and translucent.
- 7. Remove the pan from the heat and let the onion mixture cool down completely.
- 8. Wash the tomatoes under running water.
- 9. Remove the hard stem ends from the tomatoes.
- 10. Cut the tomatoes into small cubes.
- 11. Place the tomato cubes into a tall container.
- 12. Puree the tomatoes with a hand blender until smooth.
- 13. Wash the fresh thyme under cold water.
- 14. Dry the thyme sprigs thoroughly.
- 15. Pluck the small thyme leaves off the woody stems.
- 16. Take the mozzarella out of the package and let it drain well.
- 17. Cut twelve thin slices from the mozzarella.
- 18. Cut the remaining mozzarella into small cubes.
- 19. Take a large mixing bowl.
- 20. Add the tomato puree and tomato paste to the bowl.
- 21. Add the yogurt to the bowl.
- 22. Crack the egg into the bowl.
- 23. Add the remaining olive oil to the bowl.
- 24. Add the plucked thyme leaves to the bowl.
- 25. Mix these wet ingredients well together.
- 26. Add the flour to the bowl.
- 27. Add the baking powder to the bowl.
- 28. Season the mixture with salt.
- 29. Season the mixture with pepper.
- 30. Add the cooled onion mixture to the bowl.
- 31. Stir everything vigorously until a homogeneous batter forms.
- 32. Grease twelve muffin tins with a little oil or butter.
- 33. Distribute half of the batter evenly among the muffin tins.
- 34. Place the mozzarella cubes on the batter in the tins.
- 35. Press the cheese cubes slightly into the batter.
- 36. Add the remaining batter on top of the cubes to cover them.
- 37. Place one of the thin mozzarella slices on top of each muffin.
- 38. Place the muffin tray into the preheated oven.
- 39. Bake the muffins for about 35 minutes until golden brown.
- 40. Remove the muffins from the oven.
- 41. Serve the muffins hot or lukewarm.
