Ingredients
- Vine tomatoes 4 pcs
- Cherry tomatoes mix 100 g
- Onions, yellow 1 pcs
- Thyme, fresh 10 g
- Garlic cloves 1 pcs
- Butter 2 tbsp
- Baguette 1 pcs
- Goat cheese roll 200 g
- Honey 1 tbsp
- Olive oil 4 tbsp
- Salt pinch
- Pepper, black ground pinch
Instructions
- 1. Thoroughly rinse the vine tomatoes under running water.
- 2. Slice the vine tomatoes into thin, even slices.
- 3. Wash the cherry tomatoes and chop them into small pieces.
- 4. Halve the onion, peel it, and cut it into thin strips.
- 5. Rinse the thyme, pat it dry, and pluck the leaves from the stems.
- 6. Finely chop the thyme leaves.
- 7. Lightly press the garlic clove with the flat side of a knife.
- 8. Slice the baguette into thin pieces.
- 9. Melt the butter in a pan over high heat.
- 10. Add the garlic to the hot butter.
- 11. Fry the baguette slices in the pan for about two minutes.
- 12. Remove the pan from the heat as soon as the slices are golden brown.
- 13. Slice the goat cheese into thin pieces.
- 14. Place the goat cheese slices on the toasted bread pieces.
- 15. Drizzle some honey over the cheese.
- 16. Cover the pan and let the crostini rest briefly.
- 17. Arrange the tomato slices evenly on the plates.
- 18. Distribute the chopped cherry tomatoes, onion strips, and thyme over the tomato slices.
- 19. Drizzle the carpaccio with olive oil.
- 20. Season the dish with salt and pepper to taste.
- 21. Serve the tomato carpaccio together with the goat cheese crostini.
