  1. 1. Rinse the tomatoes under running water.
  2. 2. Remove the stem areas from the tomatoes.
  3. 3. Cut a small cross into the bottom of each tomato.
  4. 4. Pour boiling water over the tomatoes in a bowl.
  5. 5. Let the tomatoes sit in the hot water for a short time.
  6. 6. Drain the hot water.
  7. 7. Immediately pour cold water over the tomatoes to cool them down.
  8. 8. Peel the skin off the tomatoes.
  9. 9. Cut the peeled tomatoes into small cubes.
  10. 10. Peel the onion and the garlic.
  11. 11. Finely chop the onion and the garlic.
  12. 12. Heat the oil in a pan over high heat.
  13. 13. Add the chopped onion and garlic to the hot pan.
  14. 14. Fry the onions and garlic for about 3 minutes.
  15. 15. Add the tomato cubes to the pan.
  16. 16. Season the mixture with salt, pepper, and sugar.
  17. 17. Stir the tomato paste into the pan.
  18. 18. Pour the broth into the tomato mixture.
  19. 19. Let the mixture simmer on medium heat for 5 to 7 minutes.
  20. 20. Stir occasionally while doing so.
  21. 21. Cook the mixture until it becomes thicker.
  22. 22. Remove the pan from the heat and let the mixture cool down.
  23. 23. Cut the olives into small pieces.
  24. 24. Mix the cooled tomato mixture with the olives.
  25. 25. Fold the cream cheese into the tomato mixture.
  26. 26. Taste the spread one last time and adjust seasoning if needed.
  27. 27. Serve the spread on fresh peasant bread or ciabatta.
