🍽️ Fresh Tomato Spread

Ingredients
- Vine tomatoes 6 pcs.
- Onions, yellow 1 pcs.
- Garlic cloves 2 pcs.
- Olive oil 1 tbsp.
- Salt pinch
- Pepper, black ground pinch
- Sugar 1 tsp.
- Tomato paste 1 tbsp.
- Vegetable broth 100 ml
- Olives, green 30 g
- Fresh cheese, plain 100 g
Instructions
- 1. Rinse the tomatoes under running water.
- 2. Remove the stem areas from the tomatoes.
- 3. Cut a small cross into the bottom of each tomato.
- 4. Pour boiling water over the tomatoes in a bowl.
- 5. Let the tomatoes sit in the hot water for a short time.
- 6. Drain the hot water.
- 7. Immediately pour cold water over the tomatoes to cool them down.
- 8. Peel the skin off the tomatoes.
- 9. Cut the peeled tomatoes into small cubes.
- 10. Peel the onion and the garlic.
- 11. Finely chop the onion and the garlic.
- 12. Heat the oil in a pan over high heat.
- 13. Add the chopped onion and garlic to the hot pan.
- 14. Fry the onions and garlic for about 3 minutes.
- 15. Add the tomato cubes to the pan.
- 16. Season the mixture with salt, pepper, and sugar.
- 17. Stir the tomato paste into the pan.
- 18. Pour the broth into the tomato mixture.
- 19. Let the mixture simmer on medium heat for 5 to 7 minutes.
- 20. Stir occasionally while doing so.
- 21. Cook the mixture until it becomes thicker.
- 22. Remove the pan from the heat and let the mixture cool down.
- 23. Cut the olives into small pieces.
- 24. Mix the cooled tomato mixture with the olives.
- 25. Fold the cream cheese into the tomato mixture.
- 26. Taste the spread one last time and adjust seasoning if needed.
- 27. Serve the spread on fresh peasant bread or ciabatta.
