🍽️ Classic Tomato and Mozzarella Towers

Ingredients
- Mozzarella 125 g
- Vine tomatoes 4 pcs.
- Basil, fresh 25 g
- Organic limes 1 pc.
- Salt pinch
- Pepper, black ground pinch
- Mango 1 pc.
- Olive oil 4 tsp
Instructions
- 1. Place the mozzarella in a colander and let it drain.
- 2. Cut the mozzarella into 12 even slices.
- 3. Wash the tomatoes thoroughly under running water.
- 4. Cut each tomato crosswise into 4 equal slices.
- 5. Carefully pluck the basil leaves from the stems.
- 6. Wash the basil leaves and shake them dry.
- 7. Cut the basil leaves into thin strips.
- 8. Halve the lime.
- 9. Squeeze the juice from the lime.
- 10. Layer one mozzarella slice and one tomato slice alternately.
- 11. Repeat the layering until you have formed small towers.
- 12. Season the towers with salt and pepper.
- 13. Place the finished towers on a plate.
- 14. Peel the mango and cut the flesh away from the pit.
- 15. Put the mango flesh into a tall container.
- 16. Add the lime juice and oil to the mango.
- 17. Puree the mixture until smooth using a hand blender.
- 18. Season the mango puree with salt and pepper.
- 19. Fold the basil strips into the puree.
- 20. Place the mango puree on top of the tomato and mozzarella towers.
- 21. Serve the towers immediately.
