  1. 1. Place the mozzarella in a colander and let it drain.
  2. 2. Cut the mozzarella into 12 even slices.
  3. 3. Wash the tomatoes thoroughly under running water.
  4. 4. Cut each tomato crosswise into 4 equal slices.
  5. 5. Carefully pluck the basil leaves from the stems.
  6. 6. Wash the basil leaves and shake them dry.
  7. 7. Cut the basil leaves into thin strips.
  8. 8. Halve the lime.
  9. 9. Squeeze the juice from the lime.
  10. 10. Layer one mozzarella slice and one tomato slice alternately.
  11. 11. Repeat the layering until you have formed small towers.
  12. 12. Season the towers with salt and pepper.
  13. 13. Place the finished towers on a plate.
  14. 14. Peel the mango and cut the flesh away from the pit.
  15. 15. Put the mango flesh into a tall container.
  16. 16. Add the lime juice and oil to the mango.
  17. 17. Puree the mixture until smooth using a hand blender.
  18. 18. Season the mango puree with salt and pepper.
  19. 19. Fold the basil strips into the puree.
  20. 20. Place the mango puree on top of the tomato and mozzarella towers.
  21. 21. Serve the towers immediately.
