🍲 Crispy Ham Tomato-Mango Soup

Ingredients
- Mango 1 pc.
- onions, yellow 2 pc.
- garlic cloves 1 pc.
- olive oil 2 tbsp.
- tomatoes, chopped 1275 g
- tomato paste 1 tbsp.
- vegetable broth 100 ml
- salt pinch
- pepper, mixed pinch
- brown sugar 1 tsp.
- Black Forest ham 100 g
- butter 1 tbsp.
Instructions
- 1. Peel the mango and remove the flesh from the pit.
- 2. Cut one-third of the mango into small cubes.
- 3. Cut the remaining part of the mango into coarse chunks.
- 4. Peel the onions and the garlic.
- 5. Dice the onions and garlic finely.
- 6. Heat oil in a pot.
- 7. Sauté the onions and garlic over high heat for about 1 minute until translucent.
- 8. Add the chopped tomatoes to the pot.
- 9. Add the tomato paste to the pot.
- 10. Add the broth to the pot.
- 11. Add the coarsely chopped mango to the pot.
- 12. Season the soup with salt.
- 13. Season the soup with pepper.
- 14. Add 1 teaspoon of sugar to the soup.
- 15. Let the soup simmer gently for about 10 minutes.
- 16. Dice the ham slices into small pieces.
- 17. Heat butter in a frying pan.
- 18. Fry the ham cubes for about 2 minutes until crispy.
- 19. Puree the tomato-mango soup until smooth.
- 20. Taste the soup again and adjust seasoning if needed.
- 21. Pour the soup into soup bowls.
- 22. Garnish the soup with the mango cubes.
- 23. Garnish the soup with the crispy ham.
