  1. 1. Bring about 1 liter of water to a boil in a pot.
  2. 2. Wash the tomatoes thoroughly.
  3. 3. Cut a small cross into the bottom of each tomato.
  4. 4. Place the tomatoes in a bowl.
  5. 5. Pour the boiling water over the tomatoes.
  6. 6. Let the tomatoes sit in the hot water for about 1 minute.
  7. 7. Drain the hot water.
  8. 8. Rinse the tomatoes immediately under cold water to stop the cooking process.
  9. 9. Peel the skin off the tomatoes.
  10. 10. Cut the peeled tomatoes into small cubes.
  11. 11. Peel the mango.
  12. 12. Carefully separate the flesh from the pit.
  13. 13. Cut the mango flesh into cubes as well.
  14. 14. Halve the onion.
  15. 15. Peel the onion halves.
  16. 16. Dice the onion into fine pieces.
  17. 17. Peel the ginger.
  18. 18. Mince the ginger very finely.
  19. 19. Heat oil in a pot over high heat.
  20. 20. Add the onions, ginger, and chili to the pot.
  21. 21. Sauté the ingredients for about 2 minutes.
  22. 22. Add the mango cubes and tomato cubes to the pot.
  23. 23. Season the mixture with salt.
  24. 24. Add the vinegar.
  25. 25. Cover the pot.
  26. 26. Let the chutney simmer for about 10 minutes.
  27. 27. Stir in the sugar.
  28. 28. Cook the chutney for another 5 to 15 minutes uncovered.
  29. 29. Cook until the mixture becomes thick.
  30. 30. Taste the chutney and adjust seasoning if needed.
  31. 31. Fill the hot chutney into clean jars.
  32. 32. Seal the jars tightly.
  33. 33. Let the chutney cool down in the jars.
