🍽️ Greek Farmer's Salad with Crispy Tofu Skewers

Ingredients
- tofu, plain 800 g
- Mediterranean Roast Rub 8 tsp
- olive oil 8 tbsp
- salad cucumbers 1 pc
- vine tomatoes 4 pc
- pepper, yellow 1 pc
- onions, red 2 pc
- olives, black 4 tbsp
- Vegan Shepherd's Delight 150 g
- peperoni, pickled 8 pc
- lemons 1 pc
- Italian herbs, dried 2 tsp
- salt pinch
- pepper, black ground pinch
- flatbread 1 pc
Instructions
- 1. Cut the tofu into cubes of about 3 centimeters.
- 2. Place the tofu cubes into a bowl.
- 3. Add the Mediterranean roast rub and 3 tablespoons of olive oil.
- 4. Mix everything well so the tofu is marinated.
- 5. Set the bowl aside to let the tofu marinate.
- 6. Wash the cucumber thoroughly.
- 7. Remove the ends of the cucumber.
- 8. Cut the cucumber into cubes.
- 9. Wash the tomatoes.
- 10. Remove the core from the tomatoes.
- 11. Cut the tomatoes into cubes.
- 12. Wash the bell peppers.
- 13. Remove the core and seeds from the bell peppers.
- 14. Cut the bell peppers into cubes.
- 15. Halve the onions.
- 16. Peel the onions.
- 17. Slice the onions into thin strips.
- 18. Drain the olives in a sieve.
- 19. Cut the Genießerblock (cheese alternative) into cubes.
- 20. Cut the pickled peppers into small pieces.
- 21. Halve the lemon.
- 22. Squeeze the juice from the lemon.
- 23. Place the diced cucumber into a large bowl.
- 24. Add the diced tomatoes.
- 25. Add the diced bell peppers.
- 26. Add the onion strips.
- 27. Add the drained olives.
- 28. Add the cubes of the Genießerblock.
- 29. Add the small pepper pieces.
- 30. Add 3 tablespoons of olive oil to the salad.
- 31. Add 3 tablespoons of lemon juice to the salad.
- 32. Sprinkle Italian herbs over the salad.
- 33. Mix all ingredients well together.
- 34. Season the salad with salt to taste.
- 35. Season the salad with pepper to taste.
- 36. Carefully thread the marinated tofu onto the skewers.
- 37. Add 2 tablespoons of olive oil to a frying pan.
- 38. Heat the oil on high heat.
- 39. Fry the tofu skewers in the pan.
- 40. Fry the skewers for about 8 minutes.
- 41. Fry the skewers until crispy on all sides.
- 42. Preheat the oven to 180 degrees.
- 43. Select the heating mode top and bottom heat.
- 44. Place the flatbread on a baking sheet.
- 45. Place baking paper under the flatbread.
- 46. Bake the flatbread for about 6 minutes.
- 47. Remove the flatbread from the oven.
- 48. Cut the flatbread into eight pieces.
- 49. Serve the tofu souvlaki.
- 50. Add the Greek farmer's salad.
- 51. Add the flatbread.
