🍽️ Tyrolean Gröstl

Ingredients
- potatoes, mainly waxy 1 kg
- salt pinch
- gem onions 1 pc.
- chives, fresh 10 g
- butter 1 tbsp
- bacon strips 300 g
- oil 3 tbsp
- eggs 4 pc.
- pepper, black ground pinch
- cumin, whole 0.5 tsp
Instructions
- 1. Rinse the potatoes well. Bring to a boil in a pot with salted water and cook over medium heat for about 25 minutes. Then drain, let steam briefly and peel.
- 2. Cut onions in half, peel and dice finely. Wash chives and cut into small rings. Slice potatoes.
- 3. Heat 1 tablespoon of oil in a pan over high temperature. Add the potato slices and fry until golden brown for about 10 minutes. Fry onions for about 1 minute. Then add 1 tablespoon of butter and the bacon strips and fry for another 2 minutes.
- 4. Heat oil in another pan over high heat. Crack the eggs into the pan and fry for approx. 4 minutes. Season with salt and pepper.
- 5. Season the Tyrolean Gröstl with salt, pepper and cumin. Serve on plates and garnish with fried eggs and chives. Enjoy your meal! Tip: You can use excellently cooked leftover potatoes from the previous day for this dish.
