  1. 1. Rinse the potatoes well. Bring to a boil in a pot with salted water and cook over medium heat for about 25 minutes. Then drain, let steam briefly and peel.
  2. 2. Cut onions in half, peel and dice finely. Wash chives and cut into small rings. Slice potatoes.
  3. 3. Heat 1 tablespoon of oil in a pan over high temperature. Add the potato slices and fry until golden brown for about 10 minutes. Fry onions for about 1 minute. Then add 1 tablespoon of butter and the bacon strips and fry for another 2 minutes.
  4. 4. Heat oil in another pan over high heat. Crack the eggs into the pan and fry for approx. 4 minutes. Season with salt and pepper.
  5. 5. Season the Tyrolean Gröstl with salt, pepper and cumin. Serve on plates and garnish with fried eggs and chives. Enjoy your meal! Tip: You can use excellently cooked leftover potatoes from the previous day for this dish.
