🍰 Thyme-Honey Tart

Ingredients
- butter 450 g
- powdered sugar 120 g
- salt pinch
- eggs 9 pcs.
- cocoa powder 2 tsp
- wheat flour, type 405 260 g
- hazelnut kernels, ground 40 g
- thyme, fresh 10 g
- honey 2 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Beat 200 grams of butter with powdered sugar and a pinch of salt in a bowl until creamy.
- 3. Stir one egg well into the butter mixture.
- 4. Add cocoa, 150 grams of flour, and 40 grams of ground hazelnuts.
- 5. Knead the dough briefly until it is homogeneous.
- 6. Place the dough into the greased tart pan.
- 7. Make sure to form a border about 2 centimeters high.
- 8. Place baking paper into the pan.
- 9. Weight the baking paper with dry legumes such as peas or lentils.
- 10. Bake the tart for about 20 minutes in the oven.
- 11. Remove the legumes and the baking paper.
- 12. Wash the thyme and shake it dry.
- 13. Pluck the leaves from the stems.
- 14. Finely chop the thyme leaves.
- 15. Mix 250 grams of very soft butter with honey and 8 eggs in a bowl.
- 16. Fold in 100 grams of flour and the chopped thyme.
- 17. Pour the mixture into the pre-baked tart pan.
- 18. Bake the tart for another 15 minutes in the oven.
- 19. Serve the tart lukewarm or cold.
