  1. 1. Peel the ginger and the garlic.
  2. 2. Cut the ginger piece and the garlic cloves into very small cubes.
  3. 3. Wash the lemon thoroughly under running water.
  4. 4. Cut the lemon in half.
  5. 5. Squeeze the juice out of both lemon halves.
  6. 6. Take a small bowl.
  7. 7. Put the chopped ginger and garlic into the bowl.
  8. 8. Pour in the soy sauce.
  9. 9. Add the freshly squeezed lemon juice.
  10. 10. Add the sugar to the mixture.
  11. 11. Pour in the sunflower oil.
  12. 12. Stir all ingredients in the bowl well until they are combined.
  13. 13. Cut the avocados lengthwise in the middle.
  14. 14. Remove the large pit from the avocado half.
  15. 15. Peel the avocado halves.
  16. 16. Cut the flesh of the avocados into small cubes.
  17. 17. Put the avocado cubes into the bowl with the dressing.
  18. 18. Mix the avocados well with the dressing.
  19. 19. Take four large wine glasses.
  20. 20. Put half of the avocado mixture into the glasses.
  21. 21. Peel the pineapple.
  22. 22. Remove the hard core at the top of the pineapple.
  23. 23. Cut the flesh of the pineapple into small cubes.
  24. 24. Take half of the pineapple cubes.
  25. 25. Put these pineapple cubes on top of the avocado layer in the glasses.
  26. 26. Put the shrimp on top of the pineapple layer.
  27. 27. Put the remaining pineapple on top of the shrimp.
  28. 28. Put the remaining avocado mixture on top as the final layer.
  29. 29. Wash the spring onions.
  30. 30. Dry the spring onions with a kitchen towel.
  31. 31. Finely chop the spring onions.
  32. 32. Mix the chopped spring onions with the sour cream.
  33. 33. Take one tablespoon of the sour cream mixture.
  34. 34. Put the spoonful on the cocktail in one glass.
  35. 35. Repeat this for all four glasses.
