🍰 Mug Brownies with Fresh Strawberry-Mint Salad and Vegan Cookie Dough Ice Cream

Ingredients
- Zucchini 0.5 pc.
- Spelt flour, Type 630 100 g
- Margarine, vegan 2 tbsp
- Apple sauce 2 tbsp
- Baking powder 0.5 packet
- Cocoa powder 40 g
- Brown sugar 3 tbsp
- Vanilla sugar 1 packet
- Salt pinch
- Oat drink 75 ml
- Strawberries 250 g
- Mint, fresh 10 g
- Limes, organic 1 pc.
- Vegan cookie dough ice cream 4 tbsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Wash the zucchini thoroughly.
- 3. Grate the zucchini finely.
- 4. Take a large bowl.
- 5. Add the grated zucchini to the bowl.
- 6. Add the flour.
- 7. Add the margarine.
- 8. Add the applesauce.
- 9. Add the baking powder.
- 10. Add the cocoa powder.
- 11. Add 3 tablespoons of brown sugar.
- 12. Add the vanilla sugar.
- 13. Add a pinch of salt.
- 14. Add the oat drink.
- 15. Stir all ingredients in the bowl well.
- 16. Take 4 oven-safe mugs.
- 17. Grease the mugs lightly.
- 18. Distribute the batter evenly among the 4 mugs.
- 19. Place the mugs in the oven.
- 20. Bake the brownies for approx. 30 minutes.
- 21. Carefully remove the mugs from the oven.
- 22. Let the brownies cool down slightly.
- 23. Wash the strawberries.
- 24. Remove the green tops from the strawberries.
- 25. Slice the strawberries into approx. 5 mm thick slices.
- 26. Wash the mint.
- 27. Pluck the mint leaves from the stems.
- 28. Cut the mint leaves into fine strips.
- 29. Wash the lime with hot water.
- 30. Grate approx. 1 teaspoon of lime zest finely.
- 31. Take a clean bowl.
- 32. Add the sliced strawberries to the bowl.
- 33. Add the cut mint leaves.
- 34. Add the lime zest.
- 35. Mix the salad ingredients well.
- 36. Season the salad with a little sugar if needed.
- 37. Turn out the still lukewarm brownies from the mugs.
- 38. Place the brownies on plates.
- 39. Add the strawberry-mint salad.
- 40. Serve the dish with vegan cookie dough ice cream.
