🍽️ Tapas Platter: Fried Potatoes, Meatballs and Green Peppers

Ingredients
- potatoes, waxy 1 kg
- salt pinch
- onions, yellow 1 pc.
- garlic cloves 2 pc.
- minced meat, mixed 400 g
- eggs 1 pc.
- breadcrumbs 3 tbsp
- rose paprika 1 tsp
- oil 10 tbsp
- chili, ground 0.5 tsp
- sugar pinch
- tomatoes, chopped 400 g
- vinegar 1 tbsp
- frying peppers, green, grill and bake 400 g
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into cubes of about 2 centimeters.
- 3. Place the potato cubes in a pot with salted water.
- 4. Bring the water to a boil and cook the potatoes until tender for about 15 minutes.
- 5. Halve the onion and peel it.
- 6. Dice the onion into small cubes.
- 7. Peel the garlic and chop it finely.
- 8. Take half of the chopped garlic and put it in a bowl.
- 9. Add the minced meat, the egg, the breadcrumbs, salt, and 0.5 teaspoons of paprika powder.
- 10. Mix all ingredients in the bowl thoroughly.
- 11. Shape the meat mixture into small balls.
- 12. Heat 1 tablespoon of oil in a pan over high heat.
- 13. Fry the meatballs on all sides for about 5 minutes.
- 14. Remove the cooked meatballs from the pan and set them aside.
- 15. Add another 1 tablespoon of oil to the same pan and heat it.
- 16. Fry the onion cubes together with the remaining garlic for approx. 2 minutes.
- 17. Season the onions with salt, paprika powder, chili, and sugar.
- 18. Deglaze the pan with chopped tomatoes and vinegar.
- 19. Let the tomato sauce simmer.
- 20. Add the meatballs back into the sauce after about 5 minutes.
- 21. Let everything simmer further over low heat.
- 22. Place the cooked potatoes in a colander.
- 23. Let the potatoes drain well.
- 24. Heat 6 tablespoons of oil in a different pan over medium to high heat.
- 25. Fry the potato cubes until crispy for about 10 minutes.
- 26. Remove the potatoes from the pan.
- 27. Drain the potatoes on kitchen paper.
- 28. Season the potatoes with salt and paprika powder.
- 29. Heat 2 tablespoons of oil in the pan over high heat.
- 30. Fry the Padrón peppers in the hot oil for about 4 minutes.
- 31. Fry the peppers until the skin blisters.
- 32. Sprinkle the peppers with a little salt.
- 33. Arrange the fried potatoes, meatballs, and peppers on a plate.
- 34. Serve the tapas platter and enjoy your meal!
