🍰 Tannenbaum-Cupcakes – Apple Cinnamon Muffins with Green Frosting

Ingredients
- butter 250 g
- melting chocolate, dark 100 g
- apples, red 1 pcs
- eggs 1 pcs
- sugar 120 g
- vanilla sugar 2 tsp
- wheat flour, Type 405 200 g
- baking powder 2 tsp
- milk 50 ml
- cinnamon pinch
- powdered sugar 200 g
- cream cheese, plain 200 g
- pumpkin seed oil 3 tbsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan.
- 2. Bring about 1 liter of water to a boil in a pot.
- 3. Place butter and chocolate in a clean metal bowl.
- 4. Place the bowl over the hot water, but ensure no water gets into the bowl.
- 5. Melt the butter and chocolate for about 5 minutes while stirring.
- 6. Wash the apple thoroughly.
- 7. Cut the apple into quarters.
- 8. Remove the core from the apple.
- 9. Grate the apple coarsely.
- 10. Mix the melted butter and chocolate with an egg in the bowl.
- 11. Add sugar and vanilla sugar gradually.
- 12. Mix the flour with the baking powder.
- 13. Gently fold the flour mixture into the butter-sugar mixture.
- 14. Add the milk.
- 15. Stir the batter until no lumps remain.
- 16. Fold in the grated apples and cinnamon.
- 17. Line the muffin tin with paper liners.
- 18. Fill the molds evenly with the batter.
- 19. Bake the muffins for about 25 minutes in the oven.
- 20. Place the soft butter for the frosting in a separate bowl.
- 21. Beat the butter with a hand mixer for about 1 minute until creamy.
- 22. Add the powdered sugar.
- 23. Beat the mixture slowly for about 2 minutes.
- 24. Gently fold the cold cream cheese into the butter-sugar mixture.
- 25. Add the pumpkin seed oil.
- 26. Mix the ingredients well.
- 27. Chill the frosting mixture.
- 28. Remove the muffins from the oven.
- 29. Let the muffins cool for about 2 hours.
- 30. Fill the frosting into a piping bag.
- 31. Pipe the frosting onto the cupcakes in circular motions.
- 32. Decorate the cupcakes as desired.
- 33. Serve the Tannenbaum cupcakes.
