  1. 1. Fill a large pot with about 4 liters of water and add salt. Heat the water until it boils vigorously.
  2. 2. Rinse the chicken meat under running water and pat it dry with a kitchen towel. Remove any visible tendons if necessary.
  3. 3. Cut the chicken meat into bite-sized cubes of about 3 to 4 centimeters.
  4. 4. Halve an onion, remove the skin, and cut it into thin strips.
  5. 5. Heat 2 tablespoons of oil in a large frying pan over high heat.
  6. 6. Fry the chicken meat in the hot pan for about 3 to 4 minutes until golden brown.
  7. 7. Remove the fried chicken from the pan and place it on a plate.
  8. 8. Add 1 tablespoon of oil to the same pan (without cleaning it).
  9. 9. Sauté the onion strips over medium heat for about 3 minutes until soft.
  10. 10. Deglaze the onions with cream and bring the mixture to a boil.
  11. 11. Let the sauce simmer over medium heat for 3 to 4 minutes until it becomes creamy.
  12. 12. Add the tagliatelle pasta to the pot with the boiling salted water.
  13. 13. Cook the pasta for about 4 minutes until al dente (firm to the bite).
  14. 14. Drain the pasta in a colander.
  15. 15. Do not rinse the pasta, but mix them immediately with 1 tablespoon of olive oil.
  16. 16. Set the seasoned pasta aside.
  17. 17. Wash the spinach thoroughly under running water.
  18. 18. Dry the spinach in a salad spinner or with a kitchen towel.
  19. 19. Add the dry spinach to the cream-onion mixture in the pan.
  20. 20. Stir the spinach and let it wilt for 1 to 2 minutes.
  21. 21. Return the fried chicken meat to the pan.
  22. 22. Warm the chicken in the sauce for 1 to 2 minutes.
  23. 23. Season the sauce with salt and pepper to taste.
  24. 24. Add the tagliatelle pasta to the pan with the sauce and chicken.
  25. 25. Mix everything well so that the pasta is coated with the sauce.
  26. 26. Taste the dish again and adjust with salt and pepper if necessary.
  27. 27. Serve the tagliatelle with chicken and spinach cream sauce in deep plates.
