  1. 1. Bring about 5 liters of salted water to a boil in a large pot.
  2. 2. Halve the onion and garlic, peel them, and chop them finely.
  3. 3. Wash the spinach thoroughly and let it drain well.
  4. 4. Add the tagliatelle to the boiling water and cook for about 5 minutes until al dente (firm to the bite).
  5. 5. Reserve about one cup of cooking water (200–300 ml) before draining the pasta.
  6. 6. Heat oil in a pan over medium heat.
  7. 7. Sauté the onion and garlic for about 2 minutes.
  8. 8. Add the spinach and let it wilt for about 2 minutes.
  9. 9. Mix about 200 ml of the cooking water with the cream cheese in a bowl.
  10. 10. Season the cream cheese mixture with salt and pepper.
  11. 11. Pour the cream cheese mixture into the pan with the spinach.
  12. 12. Remove the pan from the heat.
  13. 13. Add the tagliatelle to the pan and mix well with the sauce.
  14. 14. If necessary, add some of the reserved cooking water to make the sauce creamier.
  15. 15. Season the pasta with salt and pepper to taste.
  16. 16. Plate the tagliatelle and serve.
