🍽️ Turkey Strips with Tagliatelle in Lemon Arugula Cream

Ingredients
- arugula 70 g
- parsley, fresh 10 g
- lemon 1 pc.
- garlic cloves 1 pc.
- oil 3 tbsp
- vegetable broth 300 ml
- crème fraîche 150 g
- salt pinch
- tagliatelle, fresh 800 g
- turkey breast fillet 400 g
- honey 1 tsp
- pepper, black ground pinch
Instructions
- 1. Wash the arugula thoroughly and let it drain well in a sieve.
- 2. Cut the arugula into coarse pieces.
- 3. Clean the parsley and shake it dry.
- 4. Separate the parsley leaves from the stems.
- 5. Finely chop the parsley leaves.
- 6. Rinse the lemon thoroughly.
- 7. Grate about one teaspoon of lemon zest.
- 8. Cut the lemon in half.
- 9. Squeeze the juice from the lemon.
- 10. Peel the garlic.
- 11. Mince the garlic finely.
- 12. Heat one tablespoon of oil in a pot over medium heat.
- 13. Fry the chopped garlic for about two minutes while stirring.
- 14. Deglaze the pan with broth.
- 15. Let the mixture simmer for about five minutes.
- 16. Mix the crème fraîche with two tablespoons of warm broth in a cup.
- 17. Add the crème fraîche mixture to the broth in the pot.
- 18. Stir the sauce well.
- 19. Reduce the heat so that the sauce no longer boils.
- 20. Bring about five liters of salted water to a boil in a large pot.
- 21. Add the tagliatelle to the boiling water.
- 22. Cook the pasta for about four minutes al dente.
- 23. Drain the tagliatelle.
- 24. Set the pasta aside.
- 25. Rinse the turkey breast.
- 26. Pat the turkey breast dry.
- 27. Cut the turkey breast into strips.
- 28. Heat two tablespoons of oil in a pan over high heat.
- 29. Fry the turkey strips for about three minutes on all sides.
- 30. Season the meat with salt and pepper.
- 31. Deglaze the meat with about one tablespoon of lemon juice.
- 32. Salt and pepper to taste.
- 33. Remove the pan from the stove.
- 34. Add the sauce to the meat.
- 35. Season the sauce with salt and pepper.
- 36. Enhance the sauce with lemon zest.
- 37. Add lemon juice to the sauce.
- 38. Stir honey into the sauce.
- 39. Add the tagliatelle to the sauce.
- 40. Add the arugula to the sauce.
- 41. Mix everything well.
- 42. Serve the dish in deep plates.
- 43. Sprinkle the dish with the chopped parsley.
