🍽️ Tender Fillet Strips on Tagliatelle with Radicchio

Ingredients
- Pork fillet 600 g
- Onions, yellow 1 pc.
- Garlic cloves 2 pc.
- Salt pinch
- Oil 2 tbsp
- Pepper, black ground pinch
- White wine, dry 200 ml
- Creme fraiche 200 g
- Tagliatelle, fresh 500 g
- Radicchio 1 pc.
Instructions
- 1. Rinse the meat under cold water and pat it dry with a kitchen towel.
- 2. Cut the meat into thin strips.
- 3. Halve the onion and remove the outer skin.
- 4. Dice the onion into small cubes.
- 5. Peel the garlic clove and chop it finely.
- 6. Pour about 5 liters of water into a large pot and add salt.
- 7. Bring the water in the pot to a boil.
- 8. Pour oil into a large pan.
- 9. Heat the oil on a medium to high burner.
- 10. Sear the meat strips for about 1 minute on each side.
- 11. Add the chopped garlic and onion cubes to the pan.
- 12. Sauté the vegetables for another 2 minutes.
- 13. Season the mixture with salt and pepper.
- 14. Deglaze the pan with wine.
- 15. Stir the crème fraîche into the sauce.
- 16. Cover the pan and let the sauce simmer for about 10 minutes.
- 17. Add the tagliatelle to the boiling salted water.
- 18. Cook the pasta for about 4 minutes until al dente (firm to the bite).
- 19. Wash the radicchio under running water.
- 20. Remove the outer leaves of the radicchio.
- 21. Slice the radicchio into thin strips.
- 22. Taste the sauce again and adjust with salt and pepper.
- 23. Drain the pasta in a colander.
- 24. Mix the drained pasta and radicchio with the sauce.
- 25. Serve the dish hot.
