  1. 1. Rinse the meat under cold water and pat it dry with a kitchen towel.
  2. 2. Cut the meat into thin strips.
  3. 3. Halve the onion and remove the outer skin.
  4. 4. Dice the onion into small cubes.
  5. 5. Peel the garlic clove and chop it finely.
  6. 6. Pour about 5 liters of water into a large pot and add salt.
  7. 7. Bring the water in the pot to a boil.
  8. 8. Pour oil into a large pan.
  9. 9. Heat the oil on a medium to high burner.
  10. 10. Sear the meat strips for about 1 minute on each side.
  11. 11. Add the chopped garlic and onion cubes to the pan.
  12. 12. Sauté the vegetables for another 2 minutes.
  13. 13. Season the mixture with salt and pepper.
  14. 14. Deglaze the pan with wine.
  15. 15. Stir the crème fraîche into the sauce.
  16. 16. Cover the pan and let the sauce simmer for about 10 minutes.
  17. 17. Add the tagliatelle to the boiling salted water.
  18. 18. Cook the pasta for about 4 minutes until al dente (firm to the bite).
  19. 19. Wash the radicchio under running water.
  20. 20. Remove the outer leaves of the radicchio.
  21. 21. Slice the radicchio into thin strips.
  22. 22. Taste the sauce again and adjust with salt and pepper.
  23. 23. Drain the pasta in a colander.
  24. 24. Mix the drained pasta and radicchio with the sauce.
  25. 25. Serve the dish hot.
