🍽️ Tagliatelle with Asparagus Salmon Sauce

Ingredients
- Salt Pinch
- green asparagus 1 bunch
- onions, yellow 1 pc.
- smoked salmon 150 g
- butter 2 tbsp
- tagliatelle, fresh 500 g
- heavy cream 200 ml
- pepper, black ground Pinch
Instructions
- 1. In a large pot, bring about 5 liters of salted water to a boil. Thoroughly wash the asparagus, trim off the woody ends, and peel the lower third. Then, slice the asparagus lengthwise into thin slices. Halve the onions, peel them, and dice finely. Cut the salmon into strips.
- 2. In a pan, melt the butter over medium heat. Sauté the onions and asparagus in it for about 5 minutes. Cook the tagliatelle in the boiling salted water for about 5 minutes. Then drain into a colander, reserving about 100 ml of the cooking water.
- 3. Deglaze the vegetables with the cream, let it come to a boil for approx. 1 minute, and add some of the cooking water. Add the salmon to the sauce and season generously with salt and pepper.
- 4. Add the pasta to the sauce and mix carefully. Plate the tagliatelle with the asparagus-salmon sauce and serve. Enjoy your meal!
