  1. 1. Mix the jerk rub (a spicy Jamaican spice blend) with two tablespoons of oil in a large bowl.
  2. 2. Wash the chicken breast, pat it dry with kitchen paper, and cut it lengthwise into four thin strips.
  3. 3. Rub the spice-oil mixture thoroughly into the meat.
  4. 4. Let the meat marinate for a few minutes to allow the flavors to penetrate.
  5. 5. Wash the limes and cut them in half.
  6. 6. Squeeze the juice from the limes.
  7. 7. Add two tablespoons of lime juice and one tablespoon of sugar to a small bowl.
  8. 8. Stir the mixture until the sugar is completely dissolved.
  9. 9. Cut a red onion in half and remove the outer skin.
  10. 10. Cut the onion into very thin strips.
  11. 11. Place the onion slices in the lime-sugar mixture and let them marinate as well.
  12. 12. Wash the fresh cilantro and shake it dry.
  13. 13. Remove the thick, coarse stems from the cilantro.
  14. 14. Finely chop the cilantro leaves.
  15. 15. Peel the pineapple and cut it lengthwise into quarters.
  16. 16. Remove the hard core from the pineapple pieces.
  17. 17. Cut the pineapple into approximately half-centimeter cubes.
  18. 18. Add the pineapple cubes, half of the chopped cilantro, one teaspoon of lime juice, and chili to a medium bowl.
  19. 19. Season the pineapple mixture with salt, pepper, and a little sugar to taste.
  20. 20. Set aside the finished pineapple salsa.
  21. 21. Heat two tablespoons of oil in a pan over high heat.
  22. 22. Fry the marinated chicken breast for about three minutes until golden brown on all sides.
  23. 23. Reduce the heat to low and add the remaining lime juice to the pan.
  24. 24. Cook the chicken for three to four minutes with the lid closed over low heat.
  25. 25. Fill the taco shells (pre-cooked tortilla shells) with the chicken meat.
  26. 26. Add the marinated red onions and the pineapple salsa to the tacos.
  27. 27. Sprinkle the tacos with the remaining fresh cilantro.
  28. 28. Drizzle the tacos with a little of the pan juices.
  29. 29. Serve the tacos immediately and enjoy your meal!
