🍽️ Chicken Tacos with Spicy Jerk Rub and Fresh Pineapple Salsa

Ingredients
- Jerk Rub Spice 0.5 tbsp
- Oil 4 tbsp
- Chicken Breast Fillets 600 g
- Organic Limes 2 pcs
- Sugar 1 tbsp
- Onions, red 1 pc
- Cilantro, fresh 20 g
- Pineapple 0.5 pc
- Chili, ground pinch
- Salt pinch
- Pepper, black ground pinch
- Taco Shells 150 g
Instructions
- 1. Mix the jerk rub (a spicy Jamaican spice blend) with two tablespoons of oil in a large bowl.
- 2. Wash the chicken breast, pat it dry with kitchen paper, and cut it lengthwise into four thin strips.
- 3. Rub the spice-oil mixture thoroughly into the meat.
- 4. Let the meat marinate for a few minutes to allow the flavors to penetrate.
- 5. Wash the limes and cut them in half.
- 6. Squeeze the juice from the limes.
- 7. Add two tablespoons of lime juice and one tablespoon of sugar to a small bowl.
- 8. Stir the mixture until the sugar is completely dissolved.
- 9. Cut a red onion in half and remove the outer skin.
- 10. Cut the onion into very thin strips.
- 11. Place the onion slices in the lime-sugar mixture and let them marinate as well.
- 12. Wash the fresh cilantro and shake it dry.
- 13. Remove the thick, coarse stems from the cilantro.
- 14. Finely chop the cilantro leaves.
- 15. Peel the pineapple and cut it lengthwise into quarters.
- 16. Remove the hard core from the pineapple pieces.
- 17. Cut the pineapple into approximately half-centimeter cubes.
- 18. Add the pineapple cubes, half of the chopped cilantro, one teaspoon of lime juice, and chili to a medium bowl.
- 19. Season the pineapple mixture with salt, pepper, and a little sugar to taste.
- 20. Set aside the finished pineapple salsa.
- 21. Heat two tablespoons of oil in a pan over high heat.
- 22. Fry the marinated chicken breast for about three minutes until golden brown on all sides.
- 23. Reduce the heat to low and add the remaining lime juice to the pan.
- 24. Cook the chicken for three to four minutes with the lid closed over low heat.
- 25. Fill the taco shells (pre-cooked tortilla shells) with the chicken meat.
- 26. Add the marinated red onions and the pineapple salsa to the tacos.
- 27. Sprinkle the tacos with the remaining fresh cilantro.
- 28. Drizzle the tacos with a little of the pan juices.
- 29. Serve the tacos immediately and enjoy your meal!
