  1. 1. Bring water to a boil in a pot or kettle.
  2. 2. Place the bulgur in a bowl.
  3. 3. Pour 75 milliliters of boiling water over the bulgur.
  4. 4. Cover the bowl.
  5. 5. Let the bulgur soak for about 20 to 25 minutes.
  6. 6. Wash the lime thoroughly.
  7. 7. Cut the lime in half.
  8. 8. Squeeze the juice from the lime.
  9. 9. Wash the tomatoes.
  10. 10. Remove the stem from the tomatoes.
  11. 11. Dice the tomatoes finely.
  12. 12. Wash the spring onions.
  13. 13. Trim the roots off the spring onions.
  14. 14. Slice the spring onions into very thin rings.
  15. 15. Rinse the parsley and mint.
  16. 16. Shake the herbs dry.
  17. 17. Remove the thick stems from the herbs.
  18. 18. Cut the herbs into fine strips.
  19. 19. Fluff the soaked bulgur slightly with a fork.
  20. 20. Fold in the tomatoes along with their juice into the bulgur.
  21. 21. Fold in the spring onions into the bulgur.
  22. 22. Drizzle oil over the mixture.
  23. 23. Add the cut herbs.
  24. 24. Add the lime juice.
  25. 25. Season with salt and pepper.
  26. 26. Serve the salad immediately.
