  1. 1. Preheat the oven to 150 degrees Celsius with top and bottom heat.
  2. 2. Rinse the veal T-bone steak under running water.
  3. 3. Pat the meat completely dry with a kitchen towel.
  4. 4. Let the steak warm up to room temperature for a while.
  5. 5. Wash the rosemary sprigs under cold water.
  6. 6. Shake the rosemary sprigs dry.
  7. 7. Put the butter and the rosemary into a small pot.
  8. 8. Melt the butter and rosemary over low heat for about one to two minutes.
  9. 9. Heat one tablespoon of oil in a frying pan on the highest setting.
  10. 10. Season the steak generously with salt.
  11. 11. Sear the first side of the steak for two to three minutes on high heat.
  12. 12. Sear the second side of the steak for two to three minutes on high heat as well.
  13. 13. Place the seared steak into a baking dish.
  14. 14. Pour the melted butter-rosemary mixture over the meat.
  15. 15. Cover the baking dish tightly with aluminum foil.
  16. 16. Place the baking dish in the oven for ten to twelve minutes to finish cooking the meat.
  17. 17. Wash the lemon under warm water.
  18. 18. Grate about one teaspoon of lemon zest finely.
  19. 19. Cut the lemon in half.
  20. 20. Squeeze the juice out of the lemon.
  21. 21. Wash the parsley under cold water.
  22. 22. Shake the parsley dry.
  23. 23. Pluck the parsley leaves from the stems.
  24. 24. Finely chop the parsley leaves.
  25. 25. Peel the garlic clove.
  26. 26. Grate the garlic finely or chop it small.
  27. 27. Put the lemon juice into a small bowl.
  28. 28. Add the lemon zest to the bowl.
  29. 29. Add the garlic to the bowl.
  30. 30. Add the chopped parsley to the bowl.
  31. 31. Add a splash of olive oil to the bowl.
  32. 32. Season the mixture with salt and pepper.
  33. 33. Stir all ingredients for the sauce well.
  34. 34. Take the steak out of the oven after the cooking time.
  35. 35. Let the meat rest for about five minutes.
  36. 36. Carefully separate the meat from the bone.
  37. 37. Cut the meat into bite-sized pieces.
  38. 38. Season the cut meat to taste with black pepper.
  39. 39. Put the sauce into a small serving dish.
  40. 40. Drizzle the steak with some of the butter-rosemary mixture.
  41. 41. Serve the steak with the fresh herb and lemon sauce.
