🍽️ Veal T-Bone Steak with Fresh Herb and Lemon Sauce

Ingredients
- Veal T-Bone Steak 600 g
- Rosemary, fresh 10 g
- Butter 4 tbsp
- Oil 1 tbsp
- Salt pinch
- Organic Lemon 1 pc
- Parsley, fresh 30 g
- Garlic cloves 1 pc
- Olive oil 5 tbsp
- Pepper, black ground pinch
Instructions
- 1. Preheat the oven to 150 degrees Celsius with top and bottom heat.
- 2. Rinse the veal T-bone steak under running water.
- 3. Pat the meat completely dry with a kitchen towel.
- 4. Let the steak warm up to room temperature for a while.
- 5. Wash the rosemary sprigs under cold water.
- 6. Shake the rosemary sprigs dry.
- 7. Put the butter and the rosemary into a small pot.
- 8. Melt the butter and rosemary over low heat for about one to two minutes.
- 9. Heat one tablespoon of oil in a frying pan on the highest setting.
- 10. Season the steak generously with salt.
- 11. Sear the first side of the steak for two to three minutes on high heat.
- 12. Sear the second side of the steak for two to three minutes on high heat as well.
- 13. Place the seared steak into a baking dish.
- 14. Pour the melted butter-rosemary mixture over the meat.
- 15. Cover the baking dish tightly with aluminum foil.
- 16. Place the baking dish in the oven for ten to twelve minutes to finish cooking the meat.
- 17. Wash the lemon under warm water.
- 18. Grate about one teaspoon of lemon zest finely.
- 19. Cut the lemon in half.
- 20. Squeeze the juice out of the lemon.
- 21. Wash the parsley under cold water.
- 22. Shake the parsley dry.
- 23. Pluck the parsley leaves from the stems.
- 24. Finely chop the parsley leaves.
- 25. Peel the garlic clove.
- 26. Grate the garlic finely or chop it small.
- 27. Put the lemon juice into a small bowl.
- 28. Add the lemon zest to the bowl.
- 29. Add the garlic to the bowl.
- 30. Add the chopped parsley to the bowl.
- 31. Add a splash of olive oil to the bowl.
- 32. Season the mixture with salt and pepper.
- 33. Stir all ingredients for the sauce well.
- 34. Take the steak out of the oven after the cooking time.
- 35. Let the meat rest for about five minutes.
- 36. Carefully separate the meat from the bone.
- 37. Cut the meat into bite-sized pieces.
- 38. Season the cut meat to taste with black pepper.
- 39. Put the sauce into a small serving dish.
- 40. Drizzle the steak with some of the butter-rosemary mixture.
- 41. Serve the steak with the fresh herb and lemon sauce.
