  1. 1. Place the quark in a clean kitchen towel and squeeze it out well so that about 360 g remain. In a bowl, mix with sugar, eggs, 100 g flour and salt to form a homogeneous dough and let it rest for about 10 minutes.
  2. 2. Quickly form 8 balls from the quark mixture with moistened hands, press them flat and roll them in some flour. Heat the oil in a pan over medium to high heat and fry the syrniki for approx. 4 minutes on each side until golden brown.
  3. 3. Meanwhile, rinse the lemon under hot water and finely grate about 1 tsp of the zest. Mix the sour cream with icing sugar and lemon zest. Serve together with the lingonberries alongside the warm syrniki. Enjoy your meal!
