🍰 Sweet Monkey Bread

Ingredients
- Wheat flour, Type 405 500 g
- Milk 300 ml
- Sugar 65 g
- butter 190 g
- Yeast, fresh 1 pc
- Salt 0.25 tsp
- Brown sugar 220 g
- Cinnamon 1 tsp
Instructions
- 1. Lightly grease a bowl with flour and set it aside.
- 2. Add lukewarm milk, sugar, and 30 grams of soft butter to the mixing container.
- 3. Crumble the yeast into the mixture.
- 4. Heat the ingredients with the measuring cup in place at level 2 for 5 minutes at 37 degrees Celsius.
- 5. Add the flour and a quarter teaspoon of salt.
- 6. Knead the dough using the dough knead function for 2 minutes.
- 7. Take the dough out of the container and shape it into a ball in the prepared bowl.
- 8. Cover the bowl with a damp kitchen towel.
- 9. Let the dough rise in a warm place for about 1 hour.
- 10. Rinse the mixing container thoroughly.
- 11. Put the remaining soft butter in pieces into the clean container.
- 12. Melt the butter at level 2 for 3 minutes at 75 degrees Celsius.
- 13. Pour the melted butter into a separate bowl.
- 14. Mix brown sugar and cinnamon in a third bowl.
- 15. Brush a bundt cake pan with soft butter.
- 16. Sprinkle two tablespoons of the sugar-cinnamon mixture into the pan and distribute it evenly.
- 17. Take the risen dough and place it on a lightly floured work surface.
- 18. Divide the dough into 6 equal pieces using a dough scraper.
- 19. Divide each of these 6 pieces into 6 small pieces.
- 20. You should now have a total of 36 small dough pieces.
- 21. Shape each dough piece into a small ball.
- 22. Roll each ball first in the melted butter.
- 23. Then roll the buttered ball in the sugar-cinnamon mixture.
- 24. Place the coated balls one by one into the prepared bundt cake pan.
- 25. Cover the pan again with a damp kitchen towel.
- 26. Let the balls rise again in a warm place for about 1 hour.
- 27. Preheat the oven to 180 degrees Celsius.
- 28. Bake the bread for about 35 minutes until golden brown.
- 29. Carefully turn the warm bread out onto a cake rack.
- 30. Do not cut the bread with a knife, but pull it apart ball by ball.
