🍰 Svele – Norwegian Sweet Pancakes

Ingredients
- butter 90 g
- sugar 90 g
- wheat flour, Type 405 200 g
- salt pinch
- baking powder 1 tsp
- eggs 2 pcs
- buttermilk 350 ml
- sour cream 150 g
- wild lingonberries 150 g
Instructions
- 1. Melt 60 g of butter in a pot over low heat.
- 2. Let the melted butter cool down.
- 3. Mix sugar, flour, salt, and baking powder in a bowl.
- 4. Stir the eggs into the dry ingredients.
- 5. Add the cooled butter.
- 6. Pour in the buttermilk.
- 7. Mix everything with a hand mixer until you have a smooth batter.
- 8. Melt 1 teaspoon of butter in a frying pan over medium heat.
- 9. Pour one ladle of batter into the hot pan.
- 10. Tilt the pan to spread the batter evenly.
- 11. Bake the pancake for about 1 to 2 minutes until golden brown.
- 12. Flip the pancake when it becomes firm and lifts easily from the bottom.
- 13. Bake the other side for another minute until golden brown.
- 14. Keep the finished pancakes warm.
- 15. Repeat the process until all the batter is used.
- 16. Serve the warm pancakes with sour cream and lingonberries.
- 17. Sprinkle with a little sugar if you like.
