🍽️ Crispy Sweet Potato Toast with Fresh Avocado Dip

Ingredients
- Cashew nuts 2 tbsp
- Pepper, orange 1 pc
- Basil, fresh 10 g
- Avocado 1 pc
- Garlic cloves 1 pc
- Lemons 1 pc
- Salt pinch
- Pepper, black ground pinch
- Sweet potatoes 2 pc
Instructions
- 1. Place the cashew nuts in a dry frying pan.
- 2. Roast the nuts over medium heat for two to three minutes until fragrant.
- 3. Remove the pan from the heat and let the cashew nuts cool down completely.
- 4. Roughly chop the cooled cashew nuts with a knife.
- 5. Thoroughly wash the bell pepper under running water.
- 6. Cut the bell pepper in half and remove the stem and seeds.
- 7. Dice the bell pepper flesh into small cubes.
- 8. Wash the basilica leaves and pat them dry gently.
- 9. Pluck the leaves off the tough stems.
- 10. Finely chop the basilica leaves.
- 11. Cut the avocado in half lengthwise.
- 12. Tap the pit with a spoon and twist it out carefully.
- 13. Scoop the avocado flesh out of the skin with a spoon.
- 14. Dice the avocado flesh into small cubes.
- 15. Peel the garlic clove with a knife.
- 16. Mince the garlic very finely.
- 17. Cut the lemon in half.
- 18. Squeeze the juice from one half of the lemon.
- 19. Place the chopped cashew nuts into a large mixing bowl.
- 20. Add the diced bell pepper to the bowl.
- 21. Add the chopped basilica leaves to the bowl.
- 22. Add the avocado cubes to the mixture.
- 23. Add the finely minced garlic to the bowl.
- 24. Pour the lemon juice over the ingredients.
- 25. Season the mixture with salt to taste.
- 26. Season the mixture with freshly ground pepper to taste.
- 27. Mix all ingredients in the bowl thoroughly.
- 28. Thoroughly wash the sweet potato under running water.
- 29. Slice the sweet potato into rounds about one centimeter thick.
- 30. Place the sweet potato slices into the toaster.
- 31. Toast the slices three to four times until they are soft.
- 32. Remove the slices from the toaster when they are lightly browned.
- 33. Place the roasted sweet potato slices on a plate.
- 34. Spoon the avocado salsa onto the toast.
- 35. Serve the dish immediately and enjoy!
