🍽️ Crispy Sweet Potato Patties with Fresh Bean and Mozzarella Salad

Ingredients
- Salt pinch
- Sweet potatoes 4 pcs.
- Oil 4 tbsp.
- Pepper, black ground pinch
- Green beans 600 g
- Pepper, red 2 pcs.
- Spring onions 1 bunch
- Pumpkin seeds 50 g
- Balsamic vinegar, light 1 tbsp.
- Sugar pinch
- Mozzarella 2 pcs.
Instructions
- 1. Preheat the oven to 220 degrees Celsius using top and bottom heat.
- 2. Fill a pot with two to three liters of water and add some salt.
- 3. Wash the sweet potatoes thoroughly and peel them.
- 4. Cut the sweet potatoes into slices about one centimeter thick.
- 5. Place the sweet potato slices in a bowl.
- 6. Add one tablespoon of oil, salt, and pepper.
- 7. Toss the slices to ensure they are evenly marinated.
- 8. Arrange the sweet potatoes on a baking sheet.
- 9. Roast the sweet potatoes in the oven for 20 to 25 minutes.
- 10. Remove the sweet potatoes when they are golden brown.
- 11. Empty the bowl and rinse it clean.
- 12. Rinse the beans under running water.
- 13. Trim the ends of the beans thinly.
- 14. Bring the salted water in the pot to a boil.
- 15. Boil the beans for eight to ten minutes.
- 16. The beans should still be al dente (firm to the bite).
- 17. Drain the beans in a colander.
- 18. Rinse the beans briefly with cold water.
- 19. Wash the bell peppers and the spring onions.
- 20. Cut the bell peppers in half lengthwise.
- 21. Remove the stem and seeds from the bell pepper.
- 22. Cut the bell pepper into strips about half a centimeter wide.
- 23. Trim the root ends of the spring onions.
- 24. Slice the spring onions diagonally into thin rings.
- 25. The rings should be about half a centimeter thick.
- 26. Heat two tablespoons of oil in a frying pan over medium heat.
- 27. Fry the bell pepper strips for about three minutes.
- 28. Add the spring onions to the bell peppers.
- 29. Season with salt and pepper.
- 30. Fry the vegetables for another two minutes.
- 31. Place the drained beans in the clean bowl.
- 32. Add the fried bell peppers and spring onions.
- 33. Add pumpkin seeds and balsamic vinegar.
- 34. Season the salad with salt, pepper, and sugar.
- 35. Mix all ingredients well together.
- 36. Take the roasted sweet potatoes out of the oven.
- 37. Place the sweet potatoes on the plates.
- 38. Tear the mozzarella into rough pieces.
- 39. Distribute the mozzarella over the sweet potatoes.
- 40. Serve the bean salad alongside.
